So I made this recipe and I never looked back. Even now, if one of my kids wants pancakes and the other doesn't, I'll make this recipe to make my life easier and less stressful.

Ingredients in Bisquick Pancakes for One
You only need a few simple ingredients for these delicious pancakes!
- Bisquick. I always have a box of Bisquick pancake mix in my pantry. Whether it is store bought or homemade Bisquick, it's always in my kitchen. You can use it to make Bisquick coffee cake or even turkey pot pie with Bisquick! If you want some extra fiber in your breakfast, use a whole wheat baking mix instead.
- Vanilla Extract. For added flavor.
- Milk. Whole milk is best, but 2% milk or your favorite nondairy milk will all work in this recipe. You can also use almond milk to make almond milk pancakes too.
- Egg. A large egg helps make the pancakes nice and fluffy, while also helping keep the pancake batter together.

Variations and Substitutions
- Add protein! Add a scoop of your favorite protein powder in the pancake batter. Since we aren't using an egg, the protein powder will help replace some of the protein that the egg provided.
- Add mix ins to the batter! This is a basic pancake recipe, meaning it is versatile! Chocolate chips and blueberries are classic add ins to pancake batter, but you can even add sprinkles or mashed banana to the batter for a fun pancake breakfast!
- Add some nut butter! Add peanut butter, almond butter, or cashew butter for some more added flavor in these homemade pancakes!
- Make this a sheet pan pancake recipe! If you want to make these even easier, spray a baking sheet with cooking spray and pour the batter on the cookie sheet. Bake for 10-12 minutes at 350 degrees F. When they are baked, take them out and cut the pancakes into squares. That would make this easy recipe even easier since you don't have to worry about a hot griddle and flipping pancakes.
How To Make Bisquick Pancakes for One
Step 1: In a large bowl, add the Bisquick and ¼ cup of milk.
Step 2: Add the eggs and vanilla extract. Mix the dry ingredients with the wet ingredients.
Step 3: Stop mixing when a pancake batter forms.



Step 4: Add a tab of butter to a pan or spray with nonstick cooking spray. Turn the heat to medium-low heat to medium heat. When the butter melts, add a scoop of batter to the melted butter. Cook for 3-4 minutes.
Step 5: Flip the pancake over and cook until the second side turns golden brown. Take the pancake off the heat and continue for the rest of the batter.


Tips and Tricks
- Do not push down on the pancakes when you flip them. Though it might be tempting to push down on the pancakes, if you want perfect pancakes, just let it hang out and cook in the pan. If you push them down, you won't get that perfect fluffy texture from the pancake.
- The pancakes are ready to flip when the middle bubbles. Small bubbles will start to come through the batter. The edges of the pancakes will also start to dry out. When you see these two signs, it's time to flip the pancakes.
- Do not cook the pancakes too high. Medium heat to medium-high heat is the best for cooking pancakes. Too high and the outside will be too cooked and the inside will be raw. Too low and the pancakes will take a long time to cook.
- Make sure your Bisquick is fresh. Do not use the Bisquick if it is expired or you won't get the rise on the pancakes that you are expecting. The pancakes will come out crumbly and dense.

Recipe FAQS
The actual baking mix is vegan. Bisquick becomes not vegan when you add milk and eggs to the pancake batter. If you use nondairy milk and don't use eggs, you'll have vegan pancakes! Use vegetable oil instead of eggs in this recipe.
You can, but if you want a larger recipe, I suggest using a pancake recipe that makes more pancakes, such as pancakes with self-rising flour.
Sure! Make the pancakes and store them in an airtight container. You can also make the batter and store it in the refrigerator in a large bowl. Cover the bowl with plastic wrap and when you are ready to cook the batter, heat the griddle and cook the pancakes.
