    An easy and quick dinner to make, this Instant Pot Shrimp Scampi pasta is ready in under 30 minutes and perfect when you are in a rush on busy weeknights!

    Classic shrimp scampi is a delicious meal that is often enjoyed in Italian restaurants. Why not make it at home? It's surprisingly easy to make and when you make dinner as a one pot meal, it's a win win situation!

    When you need a quick dinner, this easy Instant Pot recipe is a must make! The tender shrimp and perfectly al dente pasta make this a dinner the whole family will love!

    Even though you can boil water in an Instant Pot, you don't need to for this recipe! Everything is cooked together right in the Instant Pot!

    Ingredients You Will Need

    You only need a few simple ingredients for this delicious recipe. Check out the exact amounts in the recipe card below.

    • Olive Oil. To saute the vegetables in.
    • Fresh lemon juice. Keep the zest too for garnish and extra lemon flavor.
    • Onions and garlic. Chopped into small pieces.
    • Frozen Shrimp. Raw shrimp that is cleaned and deveined is best so the shrimp does not get overcooked in the Instant Pot.
    • Your favorite type of pasta. Angel hair pasta, spaghetti, linguine, or fettucine are all great options for this dish.
    • Liquid. You can use water, chicken broth, chicken stock, vegetable broth, or seafood broth in this dish.
    • White wine. Pinot Grigio is the best type of white wine to use in this recipe, but Chardonnay will work too.
    • Optional ingredients would be red pepper flakes to spice up the pasta, fresh parsley to garnish with, and parmesan cheese to sprinkle on top.

    • Instant Pot. I have a 6-quart Instant Pot that I love using!
    • Knives
    • Cutting Board
    • Measuring Cups
    • Measuring Spoons
    • Mixing Spoons

    How To Make Instant Pot Shrimp Scampi

    Chop the fresh garlic and onion into small pieces. Turn on the sauté function and add the olive oil. Add the onion and garlic and cook for 1-2 minutes.

    Add the white wine and broth to the Instant Pot. Give the ingredients a good stir. Add the pasta to the Instant Pot and top the pasta with the frozen shrimp. Season with salt (kosher salt is best) and black pepper.

    Cancel the saute function and close the lid of the Instant Pot. Set the cooking time to 3 minutes on high pressure. Natural release the pressure after the cook time is up and then after 5 minutes, quick release the pressure. Give the ingredients a stir. Add the fresh lemon juice and one tablespoon of lemon zest. Add parmesan cheese and fresh parsley to the top of the pasta in the bowls.

    Tips and Tricks

    • The Instant Pot will take 8-10 minutes to come up to pressure.
    • If you only have fresh shrimp on hand, do not cook them under pressure. Once you cook the pasta and release the pressure, turn on saute mode and add the shrimp. Cook for 2 minutes and serve.
    • Serve this pasta with garlic bread or crusty bread to dunk in that delicious buttery sauce!
    • If you are using thin pasta like angel hair, cut the cooking time to 2 minutes.

    Frequently Asked Questions

    What should I store leftovers?

    Store leftovers in an airtight container and keep it in the refrigerator up to 4 days. To reheat the pasta, add it back to the Instant Pot and turn on saute mode. You can also microwave the pasta for 2-3 minutes.

    Can I use other types of pasta?

    Yes! You can use your favorite gluten free pasta, chick pea pasta, or lentil pasta. Long pasta is best for a scampi recipe, but you can use your favorite type of pasta.

    Why did I get the burn notice on my Instant Pot?

    If you got a burn notice on your Instant Pot, you probably did not have enough liquid in your Instant Pot. You want to make sure you have at least 4 cups of liquid in your Instant Pot.

    Equipment

    • Instant Pot
    • Measuring Cups

    Ingredients

    • 3 tablespoon Butter
    • 2 tablespoon Olive Oil
    • 1 Onion Diced
    • 3 Garlic Cloves
    • 1 lb Shrimp Medium, Frozen, Deveined
    • 1 lb Spaghetti or angel hair pasta
    • ½ cup White Wine
    • 4 cups Broth Chicken broth or vegetable broth
    • Salt and Pepper to taste

    Instructions

    • Chop the fresh garlic and onion into small pieces. Turn on the sauté function and add the butter and olive oil. Add the onion and garlic and cook for 1-2 minutes.
    • Add the white wine and broth to the Instant Pot. Give the ingredients a good stir. Break the pasta in half and add the pasta to the Instant Pot and top the pasta with the frozen shrimp. Season with salt (kosher salt is best) and black pepper.

    • If you are using angel hair pasta, cut the cooking time to 2 minutes.
    • The thicker the pasta the longer it will take to cook.
    • Medium to large shrimp are best so they are not too small.
    • If you only have fresh shrimp on hand, do not cook them under pressure. Once you cook the pasta and release the pressure, turn on saute mode and add the shrimp. Cook for 2 minutes and serve.

      This is my second time making this. I can not make it with garlic and onion yet due to diet restrictions ☹️ but my husband loves it without. He’s been eating plain chicken breast or plain fish. Also I’m making this with gluten free pasta and it comes out great! Saw this on your homepage when I was getting your recipe for Instant Pot pizza dough. Mentioned it to my husband and wanted me to try it out. This is very good. Thank you.
