After Thanksgiving, or after you learn how to smoke a whole turkey, there is always a bunch of turkey leftover that needs to be used. If you have had one too many turkey sandwiches with cranberry mayonnaise, then this easy turkey pot pie recipe is for you!
We are also getting help from Bisquick! No need to fight with a pie crust or make another pie crust fresh after all your Thanksgiving baking. This is one of those great recipes that comes together in no time!

Why You'll Love This Turkey Pot Pie
- It's easy to make! This Bisquick turkey pot pie is so easy to make! We will make the creamy filling filled with turkey and mixed vegetables and then top it with the the bisquick mixture. Bake it and it's ready!

- It can be made ahead of time! This is a great dinner to make when you don't feel like cooking. Make the entire recipe ahead of time, keep it in the refrigerator, and then bake it off right before you are ready to serve it.
Ingredients to Gather
You only need a few simple ingredients that you can easily find in your local grocery store for this pot pie recipe.
- Bisquick mix. Bisquick is something I always have on hand, whether it is store bought or homemade Bisquick, it's always in my pantry. You can make so many delicious recipes like Even though you can make delicious banana pancakes with Bisquick, zucchini casserole with bisquick, or pumpkin pancakes with pancake mix.
- Leftover turkey. Both white meat and dark meat are perfect in this easy recipe. Chop the turkey into small pieces before adding it to the mixture.
- Chicken broth. If you have turkey broth that you made with the leftover turkey bones, use that. Homemade chicken broth is great in this recipe too.
- Milk. 1 ½ cup milk will be used to make the Bisquick topping.
- All purpose flour. Even though we are using Bisquick for the topping, we are going to use all purpose flour to thicken the turkey mixture.
- Frozen vegetables. In the frozen aisle of your grocery store, grab a bag of mixed frozen vegetables. Save yourself the time and energy in buying fresh vegetables and use the frozen vegetables. Most frozen vegetable bags have green beans, carrots, peas, and sometimes corn.
- Onion and garlic. You can use onion powder and garlic powder if that is what you have in your pantry.
- Poultry seasoning. If you don't have poultry seasoning, Italian seasoning will work too. We'll be using salt and black pepper too to season the pot pie.

How To Make Turkey Pot Pie with Bisquick
Tips and Tricks
- You do not have to defrost the mixed vegetables before you add them to the pan. They will defrost as it cooks with the turkey.
- The Bisquick mixture will resemble a thick pancake batter. If you prefer the topping to be more of a biscuit texture, add less milk and more Bisquick to the mixture.
- Make sure to spread the Bisquick mixture over the top of the pan evenly so the mixture is all over the pot pie.
- If you have an oven safe saute pan, use that to saute the vegetables in as well as bake the pot pie in. Otherwise, pour the turkey mixture into a pie dish or an ungreased rectangle baking dish and then top it with the Bisquick mixture.
Can I Use Chicken Instead of Turkey?
Yes! A lot of the year we tender to have leftover chicken in the refrigerator instead of leftover Thanksgiving turkey. Sometimes we have leftover rotisserie chicken or leftover roast chicken readily available in the refrigerator.
Use four cups of chopped chicken instead of turkey to make this Bisquick chicken pot pie recipe. Chicken breast, chicken thighs, or a mixture of white and dark meat can be used an easy chicken pot pie recipe.
You can also use leftover Instant Pot turkey tenderloin or leftover turkey breast if you aren't making a full turkey.
Variations
- Use condensed soup. In a pinch, you can use cream of chicken soup or cream of mushroom soup. To use cream soups, simply mix the turkey, veggies, and canned soup together in a medium pot over medium heat until a creamy gravy forms. Pour the soup mixture into a baking dish and top with the Bisquick mixture. Bake until the top is light brown.
- Add more veggies! Broccoli, cauliflower, sweet potatoes, celery, zucchini, and a combination of veggies are perfect for this recipe.
- Add more flavorings! You can make this spicy by adding crushed red pepper flakes or hot sauce to the turkey mixture. Sauté up some bacon and add that to the mixture. It would also be so good to sauté the veggies and turkey in the bacon drippings instead of unsalted butter or olive oil.
What To Serve With Turkey Pot Pie
Serve this delicious turkey pot pie as a main dish and roasted Brussel sprouts, Instant Pot asparagus, Instant Pot broccoli, baked brown sugar carrots, or Italian stuffed mushrooms.
A simple side salad or Caesar salad would also be a great idea to make a well rounded meal the whole family will enjoy.
Storage Instructions
Store leftovers in an airtight container in the refrigerator for up to 4 days.
This leftover turkey pot pie can also be frozen! Bake the pot pie completely and then let it cool to room temperature. Cover the casserole dish with aluminum foil and freeze for up to 3 months. When you are ready to serve the pot pie, heat oven to 400 degrees and bake for 30-35 minutes or until heated through.

A pie plate, a glass pan, or a 9x13 inch baking dish are all great options. You can also bake it right in a cast iron skillet.
Yes! You would have to use betty crocker gluten free bisquick and instead of flour to thicken the mixture, use cornstarch.
You can use 2 ingredient biscuits as the topping or your favorite biscuit recipe. A sourdough pie crust could also be used to make a more traditional pot pie recipe.

Leftover Turkey Pot Pie (with Bisquick!)
Ingredients
- 4 tablespoon Butter
- 1 Onion Chopped
- 3 Garlic cloves Chopped
- 1 bag Frozen Mixed Vegetables 12-16 ounces
- 2 teaspoon Poultry Seasoning
- 4 cups Leftover Turkey Chopped
- 2 ½ cups Chicken Broth
- 4 tablespoon All Purpose Flour
For the Topping
- 2 ½ cups Bisquick
- 1 ½ cups Milk Whole milk or 2% milk
- 1 teaspoon Poultry Seasoning
Instructions
- Preheat the oven to 400 degrees. Chop the onions and garlic.
- In a large sauté pan, add the butter. Add the chopped onions and garlic to the pan and sauté for 2-3 minutes or until softened.
- Add the chopped turkey to the pan along with the bag of frozen vegetables. Mix well. Sprinkle the flour on top of the mixture and mix again. Pour the chicken broth, poultry seasoning, and salt and black pepper into the pan and mix well. Let the mixture simmer for 3-4 minutes to thicken.
- In a small bowl, mix together the milk, Bisquick, and poultry seasoning. Mix until a thick batter forms.
- If you are using an oven safe sauté pan, pour the Bisquick mixture over the turkey mixture. If not, pour the turkey mixture into a baking dish and then pour the Bisquick mixture over that.
- Bake for 30-35 minutes or until the top is golden brown. Serve immediately.
