Ingredients for Bisquick Coffee Cake in a 9x13 Inch Pan
- Bisquick Baking Mix. Make sure your Bisquick is fresh and not expired. If it is expired the cake will not rise. You can use your favorite pancake mix, just make sure it's not the just add water kind of pancake mix.
- Sour cream. This keeps the cake moist. Greek yogurt can be used too.
- Milk. I like whole milk in my coffee cake recipes, but your favorite non dairy milk or a 2% milk will work too.
- Sugar. We will be adding sugar to the batter as well as brown sugar to the streusel topping.
- Eggs. Eggs are necessary in any cake to keep the cake together and add some fat to the batter.

Tips and Tricks
- Make sure you are using cold butter in the streusel topping! The cold butter can be mixed into the topping using a fork with a butter knife, or a pastry blender or pastry cutter. You want big chunks of butter in the topping so the streusel topping doesn't melt away.
- To ensure the crumb cake does not stick to the pan, line the pan with parchment paper before pouring the batter into the pan. You will be able to easily lift the coffee cake out of the pan.
- Make a swirl! Pour half the batter into the prepared pan and then sprinkle brown sugar and cinnamon over the top. Pour the rest of the batter on top and then sprinkle with the streusel topping.
Variations
- Add nuts! Add chopped walnuts or chopped pecans to the brown sugar streusel on top for a little more crunch.
- Drizzle with an icing. Instead of dusting the top of the cake with powder sugar, drizzle a cream cheese icing or a powdered sugar icing on top of the cake. To easily make an icing, in a small bowl mix powdered sugar with milk and vanilla extract. Mix until you get the consistency you are looking for and drizzle over the top of the cake.
- Mix ingredients into the cake! Just like a Bisquick blueberry coffee cake recipe, add blueberries to the cake. You can also add chocolate chips to the batter because chocolate chips make everything better!
How To Store Bisquick Coffee Cake
Store leftover coffee cake either in the pan or in an airtight container. It will stay fresh for 3-4 days. To store the coffee cake in the pan, simply cover it with plastic wrap.
You can also freeze this sour cream coffee cake. Bake it completely but do not sprinkle the top of the cake with powdered sugar. Cover it with aluminum foil and freeze it in the pan for up to 3 months.
Allow the cake to defrost on the counter and serve when it has defrosted completely.
Frequently Asked Questions
Make sure you are using sour cream and whole milk. Lower fat milk will not lead to a moist coffee cake. This is a treat that needs the fat, so don't skimp on that!
Gluten free Bisquick and regular Bisquick can not be used interchangeably unfortunately.
You can use your favorite pancake mix in this recipe. Just make sure you are not using the just add water type of pancake mix.

Bisquick Coffee Cake in a 9x13 Inch Pan
Ingredients
- 3 cups Bisquick
- 1 ½ cups Milk
- 2 Eggs
- ⅓ cup Sugar
- 1 teaspoon Vanilla
- ½ cup Sour Cream
For the Streusel Topping
- 1 ½ cup Bisquick
- 1 ½ cup Brown Sugar
- 8 tablespoon Butter Cold
- 2 teaspoon Cinnamon
Instructions
- Preheat the oven to 375 degrees. Grease a 9x13 inch baking dish with butter and set that aside.
- In a large bowl, add the Bisquick, eggs, sugar, sour cream, milk, and vanilla extract. Mix well until a batter forms.
- Pour the batter into the prepared baking dish.
- In a medium bowl, mix together the streusel ingredients. Mix the ingredients until large chunks form and all the ingredients are mixed together.
- Sprinkle the streusel topping over the batter in the pan. Place the pan in the preheated oven for 35-40 minutes or until golden brown and a toothpick is inserted and comes out clean.
- When the coffee cake is done baking, take it out of the oven and sprinkle with powdered sugar. Serve immediately.
