Bisquick or pancake mix is a great ingredient to keep in your pantry. You can make peanut butter cookies with pancake mix, pumpkin waffles with pancake mix, and even pumpkin pancakes with pancake mix!

  • It can be made ahead of time! This recipe is perfect for a brunch, special occasion, Mother's Day, Christmas, or Easter Sunday breakfast. Make everything ahead of time, let it hang out in the refrigerator, and then bake.
  • It's a great recipe for a crowd! If you have a lot of people coming over and need to make a big breakfast recipe, this one is for you! Use a baking sheet and pour the batter into the baking sheet. You'll have enough pancakes everyone!

Ingredients to Gather

You only need a few simple ingredients for this easy breakfast recipe!

The bisquick breakfast casserole ingredients are labeled.
  • Bisquick Pancake Mix. Bisquick has flour, salt, a little sugar, and the leavening ingredients already in it. It's a total time saver!
  • Melted Butter. This will give the casserole flavor and help keep it fluffy. If you prefer, you can use vegetable oil, canola oil, avocado oil, or coconut oil in place of butter.
  • Ham. Thick cut ham from the grocery store will work. This is also a great way to use up leftover ham. You will want to cut it into pretty big chunks.
  • Milk. Whole milk, 2% milk, or your favorite milk can be used.
  • Cheese. Shredded cheddar cheese, shredded Monterey jack cheese, or your favorite cheese are all great choices.

Step By Step Instructions

The bisquick and melted butter are added to a large bowl.
Step 1: Preheat the oven to 375 degrees f. Grease a 9x13 inch baking dish with butter or cooking spray. Mix the melted butter with the dry ingredients.
The eggs are added to the large mixing bowl.
Step 2: Add the eggs to the Bisquick mixture.
The seasonings are added to the large bowl.
Step 3: Mix in the Italian seasoning and garlic powder.
The ham is added to the large mixing bowl.
Step 4: Add the chopped ham to the bowl with the batter.
The cheese is added to the large mixing bowl.
Step 5: Fold in the shredded cheese.
The batter is added to a baking dish.
Step 6: Pour the pancake batter into the casserole dish. Place the baking dish into the preheated oven. Bake for 25-30 minutes or until golden brown. Let it cool for 10-15 minutes and serve.

Variations

  • Add veggies! Add bell peppers, onions, mushrooms, or whatever your favorite veggies are.
  • Make it sweet! Instead of adding ham and cheese, add chocolate chips, vanilla extract, blueberries, or bake the casserole plain until golden brown and then serve with your favorite toppings for pancakes.
  • Change the meat! Use breakfast sausage, cooked bacon, or cooked turkey bacon instead of ham.
  • Change the cheese! Colby jack, Monterey jack, or your favorite type of cheese would all work in this recipe.

How to Serve Bisquick Breakfast Casserole

  • With maple syrup. It might sound strange to have maple syrup on this breakfast casserole, but it adds an extra layer of sweetness that rounds out the casserole perfectly!
  • With fruit. Top this savory breakfast casserole with fresh fruit like fresh blueberries or fresh strawberries or make a simple fruit salad for a delicious brunch treat.
  • As a brunch item. This is a great recipe to add to any brunch menu. Serve it with orange juice, hash browns, sourdough scones, sourdough bagels, and blueberry French toast casserole.

Storage Tips

To make this easy breakfast casserole ahead of time mix all the ingredients together and add them to a greased baking dish greased with butter or nonstick cooking spray. Cover it with aluminum foil or plastic wrap and place it in the refrigerator for up to 24 hours ahead of baking it. When you are ready to bake it, sprinkle with some more cheddar cheese and bake.

Store leftovers in an airtight container for up to 4 days. To reheat, place them in an oven safe baking dish and bake for 10-15 minutes.

Freeze the leftover pancakes in freezer bags. Cut the breakfast casserole into pieces and place them in freezer bags. Freeze it for up to 3 months. To defrost, place it in the oven and bake for 15-20 minutes until heated through.

Yes! If you have homemade Bisquick mixture you can use that, but you can use your favorite pancake mix in this recipe.

Ingredients

  • 1 ½ cups Bisquick Pancake Mix
  • ½ cup Melted Butter
