Ingredients to Gather
- Pasta. Use your favorite shape of pasta. I like using penne or ziti, but linguine, farfalle, or rotini will all work in this recipe.
- Pork tenderloin. One package. Usually it comes in a 1-2 pound package.
- Mushrooms. Cremini mushrooms have a delicious depth of flavor since they are baby portabella mushrooms. Button mushrooms will work too.
- Sour cream. Sour cream gives the sauce a creamy texture and flavor. Heavy cream or cream cheese can be used instead of sour cream if that if what you have on hand.
- Broth. Chicken broth or vegetable broth can be used. If you have homemade chicken broth, this is a great place to use it. Try to use low sodium broth so your sauce doesn't get too salty.
- Spices. Salt, black pepper, garlic powder, and Italian seasoning will all be used in this recipe.

- You can cut the pork tenderloin into medallions if you prefer larger chunks of pork.
- To make this gluten free, use gluten free pasta and leave out the flour. Thicken the sauce with corn starch instead of flour.
Storage Tips
Store leftovers in an airtight container. Reheat the leftover pasta in a microwave safe bowl or on the stovetop in a small saucepan. Add a little bit more chicken broth to loosen the sauce a bit so the pasta does not burn.
Pork Tenderloin Pasta FAQs
Yes! You can add all the ingredients except the pasta to a slow cooker and let it cook for 4 hours on high or 8 hours on low. When there is one hour left, add the pasta and mix well. Cook until the pasta is done.
You don't have to, but if you are nervous you can. The pork should come up to at least 145 degrees F to make sure it is cooked properly.

Creamy Pork Tenderloin Pasta with Mushrooms
Ingredients
- 3 tablespoon Olive oil
- 1 Package Pork Tenderloin 1.5-2 lbs
- ⅓ cup Flour
- ½ tablespoon Garlic Powder
- ½ tablespoon Italian Seasoning
- ½ teaspoon Salt
- 1 package Cremini Mushrooms About 12 mushrooms
- 2 cups Chicken Broth
- ½ cup Sour Cream
- 1 lb Pasta Your Favorite Shape
- 2 cups Fresh Spinach
Instructions
- In a small bowl, add the flour, salt, Italian seasoning, and garlic powder. Cut the pork into 1 inch chunks and coat the pork in the flour mixture.
- In a large skillet over medium heat to medium-high heat add the olive oil. Add the pork pieces and cook for a couple of minutes until golden brown. While the pork cooks, bring a large pot of water to a boil.
- Remove the pork from the pan. Cut the mushrooms into slices and add 1 tablespoon of olive oil. Cook until golden brown and slightly softened. Add the pasta to the boiling water and cook until al dente.
- Add the pork back to the pan. Add the chicken broth and sour cream. Reduce the heat to low heat and cook while the pasta cooks.
- Add the spinach and let it wilt.
- Drain the pasta and add it to the large skillet. Mix all the ingredients well. Serve immediately.
