Instant Pot Italian Sausage and Potatoes recipe is a delicious and hearty one pot meal that is perfect for busy weeknights or cozy dinners. This dish features juicy Italian sausage cooked with tender potatoes and a flavorful combination of herbs and spices!

Main Ingredients You'll Need

The Instant Pot Sausage and Potatoes are labeled.
  • Italian Sausages. We will use two pounds of your favorite sweet Italian Sausage. I like to cut them in half, but that is just personal preference. You do not have to cut them.
  • Tomato Sauce. One small can or ½ cup of homemade marinara sauce.
  • Italian seasoning. To add some extra flavor to the dish.
  • Chicken Broth. This is the liquid that you need to cook the ingredients.
  • Potatoes. Russet Potatoes that will hold up under the pressure of the Instant Pot.

Variations

  • Change the type of sausage! Use chicken sausage, your favorite smoked sausage, kielbasa sausage, turkey sausage, or even breakfast sausage!
  • For the liquid, use a cup of water, chicken broth, chicken stock, or beef broth.
  • Change the potatoes! Use Russet potatoes, Yukon gold potatoes, red potatoes, or even sweet potatoes!
  • Add more veggies! Feel free to add red bell peppers, fresh green beans, zucchini, or mushrooms to the Instant Pot when you add the sweet onion.
  • Add more spices! Feel free to add garlic powder, onion powder, fresh ground black pepper, or even chili powder!

Step By Step Instructions

The sausage is being browned in the Instant Pot.
Step 1: Set the electric pressure cooker to saute. Add the sausages and brown sausages for 4-5 minutes of cook time.
The onions are added to the Instant Pot.
Step 2: Add the sliced onions to the Instant Pot.
The potatoes are added to the Instant Pot.
Step 3: Add the diced potatoes to the Instant Pot.
All the ingredients are added to the Instant Pot for the Instant Pot Italian Sausage and Potatoes.
Step 4: Add the tomatoes sauce, chicken broth, and Italian seasoning to the Instant Pot. Cover and set to high pressure for 8 minutes of cooking time. Natural release for 10 minutes and then quick release the remaining pressure.

Storage Tips

Store leftovers in an airtight container in the refrigerator for up to 5 days.

You can also freeze this sausage recipe! Place the cooled meal in a freezer friendly container and freeze it for up to 3 months. When you are ready to use it, place it in the refrigerator to defrost and then heat it up on the stovetop or in the microwave.

Serving Suggestions

  • Serve this with you favorite crusty bread, like sourdough discard bread, sourdough dinner rolls, or whole wheat dinner rolls.
  • Over pasta! Serve this over pasta such as orzo, or even Instant Pot white rice.
  • With your favorite side dishes. This would be great with a green salad, Instant Pot Asparagus, Instant Pot Broccoli, or Instant Pot Brussel Sprouts.

Recipe FAQs

Can I make this in the slow cooker?

Yes! To make this in the slow cooker you will have to first brown the sausage for a couple of minutes on the stovetop. Then add it to the slow cooker with the rest of the ingredients. Cook on high for 4 hours or low for 8 hours.

Can I use ground sausage instead?

Ground sausage or ground beef might be too small for this recipe. You would want large chunks of sausage in this recipe.

Equipment

Ingredients

  • 2 lb Italian Sausages Cut in half
  • 2 lb Potatoes 2 large potatoes, cut into chunks
  • 1 Sweet Onion Sliced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Italian Seasoning
  • 1 cup Chicken Broth
  • 1 can Tomato Sauce 8 ounces, 1 cup
  • Salt and Pepper To Taste

Instructions

  • Add the olive oil to the Instant Pot and set the Instant Pot to Saute. Add the sausages and brown for 4-5 minutes. While the sausage cooks, slice the onions and cut the potatoes into large chunks.
  • Cancel the saute function and add the remaining ingredients.
  • Close the lid of the Instant Pot and set the cooking time to 8 minutes on high pressure. Let the Instant Pot natural release for 10 minutes. Quick release the remaining pressure.

  • Serve this dish with your favorite green salad, over pasta, in a crusty hoagie roll, or over rice.
