Creamy Pork Tenderloin Pasta with Mushrooms

Ingredients

  • 3 tablespoon Olive oil
  • 1 Package Pork Tenderloin 1.5-2 lbs
  • cup Flour
  • ½ tablespoon Garlic Powder
  • ½ tablespoon Italian Seasoning
  • ½ teaspoon Salt
  • 1 package Cremini Mushrooms About 12 mushrooms
  • 2 cups Chicken Broth
  • ½ cup Sour Cream
  • 1 lb Pasta Your Favorite Shape
  • 2 cups Fresh Spinach

Instructions

  • In a small bowl, add the flour, salt, Italian seasoning, and garlic powder. Cut the pork into 1 inch chunks and coat the pork in the flour mixture.
  • In a large skillet over medium heat to medium-high heat add the olive oil. Add the pork pieces and cook for a couple of minutes until golden brown. While the pork cooks, bring a large pot of water to a boil.
  • Remove the pork from the pan. Cut the mushrooms into slices and add 1 tablespoon of olive oil. Cook until golden brown and slightly softened. Add the pasta to the boiling water and cook until al dente.
  • Add the pork back to the pan. Add the chicken broth and sour cream. Reduce the heat to low heat and cook while the pasta cooks.
  • Add the spinach and let it wilt.
  • Drain the pasta and add it to the large skillet. Mix all the ingredients well. Serve immediately.

Notes

  • Change how you serve it! If you don't want to serve the sauce over pasta, you can serve it over mashed potatoescouscous, or rice instead.
  • Change the protein! This is make with pork tenderloin, but you can use boneless pork chops, pork shoulder, or even boneless skinless chicken breast or chicken thighs for this recipe.
  • Add more flavorings! You can sauté applewood smoked bacon first or add some white wine for more flavor in the sauce.
  • Add more veggies! We are adding spinach to this recipe, but you can add cherry tomatoes, yellow onion, lots of garlic, zucchini, sun-dried tomatoes, green beans, and peas for more added veggies.
  • Use a marinated pork loin! In the grocery store, you can usually find marinated pork loins that are full of flavor. Smithfield roasted garlic, herb marinated fresh pork tenderloin, or whatever your favorite pork marinade is will work here too!
