Every special dinner needs a special dinner roll. These homemade brioche dinner rolls are so soft and buttery, full of delicious flavor! You won't believe how easy they are to make too!

These rolls are perfect for sliders, dipped in soup, or slathered butter and topped with mixed berry jam, strawberry jam, or Instant Pot blueberry jam. They are so delicious and a necessary addition to any dinner table! They would go perfectly with Baked Spaghetti and Meatballs too!

What is a Brioche Roll?

Most dinner rolls are made simply with yeast, flour, water, and salt. They have a crispy crust and are baked on a baking sheet so the crust hardens nicely.

Brioche dinner rolls are different because they also have milk, butter, and eggs in the dough. The addition of these ingredients gives these dinner rolls a softer, more buttery flavor than your standard dinner roll.

Ingredients You'll Need

You only need s few simple ingredients for these rolls!
  • Bread flour. Bread flour is best in bread recipes because it has a higher protein content, meaning the gluten will build up better. If you don't have bread flour and are in a pinch, you can use all purpose flour.
  • Milk. Whole milk or 2% will work. You want the milk just slightly warmed to above room temperature. I like to place the milk in a microwave safe bowl and microwave it for 30 seconds. That usually warms it up enough. If you cannot touch the milk without it burning your finger, its too hot. Don't put the yeast in the milk if it's too hot or you will kill the yeast.
  • Yeast. One package or 2 ¼ teaspoons.
  • Sugar. Sugar feeds the yeast, helping it grow and make the dough rise.
  • Salt. Salt flavors the rolls as well as keeps the yeast in check so it doesn't over proof.
  • Butter. Butter makes these rolls soft and decadent. The butter should be softened to room temperature.
  • Egg. Just one large egg is all you need.

Active Dry Yeast vs Instant Yeast

In this recipe, we are using Active Dry Yeast. That means it needs to be "bloomed" or woken up. All you have to do is sprinkle the yeast over some lukewarm liquid (in this case we are using milk, but warm water would be perfect too) and allow it to get foamy. When it does, you are ready to use the yeast!

If it doesn't get foamy, throw out the yeast and start again. That means the yeast is old or expired and won't allow the dough to rise properly.

If you only have instant yeast, you can use that too. No need to "bloom the yeast. Just add it to the liquid along with the flour and salt.

  • Stand Mixer
  • Baking Dish

How To Make Brioche Dinner Rolls

In a liquid measuring cup, add the warm milk and sprinkle the yeast on top of the milk. Let it sit for 5 minutes.

In the bowl of a stand mixer fitted with the hook attachment, add the flour, sugar, and salt. Turn the mixer on and mix well.

Turn off the mixer and add the egg, cubed butter, and yeast mixture. Set the mixer on low speed for 8-10 minutes. The mixture will look very wet, but it will come together.

Sprinkle the yeast over the milk until foamy.
All the ingredients are in the stand mixer.
Mix all the ingredients in a stand mixer.

Cover the bowl with plastic wrap and let it rise at room temperature for 90 minutes to 2 hours. The dough will look light and fluffy and double in size when it is ready.

Butter a 9x13 inch baking dish. Place the dough on a lightly floured surface and flatten it out. Cut the dough into 12 equal pieces and shape the dough into balls. Place the dough balls in the prepared baking dish. Cover the baking dish with plastic wrap and let it rest for 1 hour.

When the ingredients have come together, the dough is ready to rise for the first time.
The dough is cut into 12 pieces.
Shape the dough with your hands after cutting even pieces.

Make sure to butter the baking dish so the rolls do not stick.

Preheat the oven to 350 degrees. After 1 hour, mix together 1 egg and 1 tablespoon of water. Brush the egg mixture over the rolls. Bake the rolls for 20-25 minutes or until the rolls are golden brown. Serve immediately.

Tips and Tricks

  • The dough will take anywhere from 90 minutes to 2 hours to rise. If your kitchen is colder, it might take close to 2 hours to rise. If it's a warmer day, it might be closer to 1 hour when the dough has risen properly.
  • If the dough is too sticky after the first rise, don't be afraid to add more flour to your work surface when you are shaping the dough. Also adding flour to your hands will keep the dough from sticking to your hands.
  • The rolls are done when they look golden brown on top and when they push back from you press your finger into them.

Storage Tips

When the rolls cool to room temperature, place the rolls into an airtight container or a gallon sized Ziploc bag. The rolls will stay fresh for up to 4 days.

To freeze the rolls, let them cool and place them in a freezer bag. Freeze them for up to 3 months. Warm the rolls in the oven for 10-15 minutes at 300 degrees to gently warm them up.

What Goes With Brioche Rolls For Dinner?

These rolls go with almost any dinner! Here are some ideas though!

  • As a side to Turkey Tenderloin.
  • Dipped in Lasagna Soup.
  • Served alongside Chicken Stew.
  • With Chicken Burgers as sliders.
  • Topped with Barbecue Pulled Chicken.
  • As meatball sliders with 5 ingredient meatballs.

Frequently Asked Questions

Can I make the dough ahead of time?

Yes! Make the bread dough completely and let it rise. When the dough has risen, cover it with plastic wrap and place it in the refrigerator. The next day when you are ready to bake the rolls, cut them into equal pieces, and place them in the baking dish for at least 1 hour to come to room temperature. They should look puffy. Bake them for 20-25 minutes or until they are golden brown.

Do I need a bread machine for these brioche dinner rolls?

No! No bread machine is needed! That's the great thing about these rolls. You don't even need a stand mixer if you don't have one. You can even mix these rolls by hand if you would like! If you do not have a stand mixer, you can mix the dough completely by hand and then knead the dough by hand for 10-12 minutes until the dough is soft and a little sticky.

Can I top these rolls with anything?

Sure! You can add sesame seeds, poppy seeds, or simply coarse sea salt to the tops of these buns. But they are delicious on their own too!

Ingredients

  • 1 cup Whole Milk Warm
  • 2 ¼ teaspoon Active Dry Yeast 1 Package
  • 3 ½ cups Bread Flour
  • 3 tablespoon Sugar
  • 1 teaspoon Salt
  • 5 tablespoon Unsalted Butter Room temperature, cubed
  • 1 large Egg

Instructions
