Ingredients To Gather

  • Box of cake mix. We are using yellow cake mix today. Cake mix has all purpose flour in it already, about ¼ cup sugar, and your leavening ingredients already.
  • Overripe bananas. They will give a little bit of banana flavor to the muffins, but they will really be replacing the large eggs that you would normally include in muffins.

How To Make 2 Ingredient Banana Muffins

Step 1: In a large bowl, add the bananas and mash them well until they are pureed. Preheat the oven to 375 degrees. Add cupcake liners to a muffin tin. Set that aside.
The cake mix is added to the bowl with the bananas.
Step 2: Add the dry ingredients to the mashed bananas. Mix the dry ingredients into the wet ingredients until fully combined.
The chocolate chips are added to the bowl.
Step 3: If you are adding chocolate chips, add the to the muffin batter. Scoop the muffin batter into the muffin tins.

Step 4: Place the muffin tin into the preheated oven. Bake for 18-20 minutes or until a toothpick is inserted and comes out clean.

Tips and Tricks

  • The cake mix and the bananas will look dry when first mixed, but as you continue mixing it will come together and look like a muffin batter.
  • Feel free to use a hand mixer if you prefer to make it easier to mix the ingredients together.
  • The muffins are done when a toothpick is inserted into the center of the muffin and comes out clean.
  • An ice cream scoop is a helpful tool to use to make sure the muffin batter is equally divided among the muffin tins. A ¼ cup measuring cup can also be used if you don't have an ice cream scoop handy.
  • Allow the muffins to cool to room temperature on a wire rack before serving. If they are served to hot, they may stick to the wrapper.
  • Muffin cups ensures that the muffins will easily come out from the muffin tin. You can use silicone wrappers or paper liners for these muffins.

Variations

  • Add a streusel topping to the top of the muffin! There's nothing a brown sugar streusel topping can't make more delicious! This streusel topping on my cinnamon streusel banana bread is so good!
  • Add peanut butter! Instead of chocolate chips, swirl in your favorite peanut butter or add peanut butter chips!
  • Add nuts! Make banana nut muffins but adding chopped walnuts or chopped pecans to the batter.
  • Make them mini! Pour the batter into mini muffin tins for smaller version of these easy banana muffins!

Place leftover muffins in an airtight container. They should be kept on the counter for up to 4 days. Do not store them in the refrigerator or they will go stale.

How can I quickly ripen bananas?

To ripen bananas faster than they normally would, place the bananas in a brown bag with an apple. The gases from the skin of the apple speeds up the ripening process. This way will take about a day to ripen.

If you are in a pinch and want to ripen bananas quickly, preheat the oven to 300 degrees. Place the whole banana on a baking sheet and place them in the oven for 15 minutes. When the skins turn completely black they are ready! Carefully peel the banana and let it cool, then proceed with the recipe.

Can I freeze muffins?

Yes! Wrap the muffins in plastic wrap and place them in a gallon sized Ziploc bag and freeze them for up to 3 months.

Can I use other types of cake mix?

Yes! You can use yellow cake mix, white cake mix, chocolate cake mix, or even cinnamon cake mix. Whatever you favorite flavor of cake mix is will work in this recipe!
