- Sour cream. This is to add a little more moisture into the cake batter. A full fat Greek yogurt can be used instead of sour cream if that is what you have on hand.

- To make the filling even easier to mix together, use an electric mixer. Mix the batter on low speed and then mix in the apple filling with a wooden spoon so the apples do not get chopped too small.
- Make sure to grease the baking dish well. Use melted butter or cooking spray to grease the pan. This apple cinnamon coffee cake has a lot of sugar in it and in the streusel topping, so it will stick to the pan.
- To easily mix the brown sugar crumble, use a pastry blender. This will mix the streusel topping well and it will get the job done quickly.

- Add a maple glaze. To take this cake to the next level, add a glaze to the cooled cake. Mix together 1 cup of powdered sugar with 2 tablespoons of milk, 1 teaspoon of vanilla extract, and 1 tablespoon of maple syrup. Mix well and drizzle over the cake.

Apple Pie Coffee Cake (with Cake Mix)
Ingredients
- 1 Box Yellow Cake Mix
- ¼ cup Butter Cubed
- 1 cup Brown Sugar
- 3 large Eggs
- 1 ½ cups Sour Cream
- 1 can Apple Pie FIlling 21 ounce can
- 1 teaspoon Ground cinnamon
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish with cooking spray or melted butter. Set that aside.
- In a small mixing bowl, add ½ cup of the cake mix, brown sugar, and the cubed butter. Mix the ingredients well until a crumble forms. Set that aside.
- In a large bowl, add the rest of the cake mix, the eggs, sour cream, and ground cinnamon. Mix well until all the ingredients are combined.
- Open the can of apple pie filling and chop the apples on a cutting board. Rough chop them so the apples are smaller, into about 1 inch pieces.
- Add the apples to the large mixing bowl with the cake batter. Mix well.
- Pour the cake batter into the prepared baking dish. Evenly sprinkle the brown sugar crumble to the top of the cake. Bake the cake for 35-40 minutes or until the top of the cake is golden brown and a toothpick is inserted and comes out clean.
- Serve this cake with a sprinkle of powdered sugar or your favorite whipped cream.
