- Box of cake mix. We are using Spice cake for this easy recipe. Spice cake mix is next to the other cake mixes at your local grocery store.
- Can of pumpkin puree. One 15 ounce can of pumpkin puree, not pumpkin pie filling.
Pumpkin Puree vs Pumpkin Pie Filling
This recipe has canned pumpkin puree, which is just pure pumpkin that has been cooked down and pureed. Canned pumpkin pie is essentially the inside of a pumpkin pie. It has all the spices already in it. When making this recipe, make sure it's pure canned pumpkin. Canned pumpkin pie will double the spices, which would overpower this bread with cinnamon and pumpkin pie spice.
Let's Make 2 Ingredient Pumpkin Muffins!
Preheat the oven to 375 degrees. Line a muffin tin with muffin liners. Set that aside.
Open the box of spice cake mix and add it to a large bowl. Open the can of pumpkin and add it to the bowl.
With a wooden spoon or an electric mixer, mix the dry ingredients into the pumpkin puree. If you are using a wooden spoon, it will look crumbly at first, but then it will come together. This is a muffin batter is a thick batter, so stick with it!
With an ice cream scoop, scoop the batter into the prepared muffin tin with cupcake liners. Set the baking time to 18-20 minutes or until a toothpick is inserted and comes out clean. Let the muffins cool for a few minutes before trying to take them out of the wrappers.
Variations
- Add a streusel topping! To add a little extra sweetness to the muffins, add a brown sugar streusel topping like the one on these apple streusel muffins.
- Add chocolate chips! Everything is better with a handful of semi-sweet chocolate chips!
- Make mini muffins! Just like these mini pumpkin chocolate chip muffins, instead of a full-sized muffin tin, use a mini muffin tin! The kids will love them!
- Add some crunch! Top these pumpkin spice muffins with pumpkin seeds for extra nutrition and extra crunch!
- Add a glaze or frosting! To take these muffins up a level, add a cream cheese frosting like on this carrot cake, or a simple cinnamon glaze like in this pumpkin bread!
Storage Tips
Store any leftover muffins in an airtight container on the counter. Do not place them in the refrigerator as that will make them go stale quickly. You can also keep them in the muffin pan, but cover them with plastic wrap if you know you are going to eat them quickly.
To freeze these pumpkin cake mix muffins, let the muffins cool to room temperature and then place them in a freezer safe container, like a gallon sized Ziploc bag. Freeze them for up to 3 months. To defrost the muffins, place them on the counter and left them defrost slowly.

Yes! If you can't find box spiced cake mix, you can use a different cake mix. Chocolate cake mix will make these muffins fudgy like brownies. a box of yellow cake mix or white cake mix can be used too, just add 1 teaspoon of pumpkin pie spice to get those Fall flavors in the muffins. You can even use carrot cake mix as that has a lot of spices already in it too!
Yes! Spray two loaf pans with cooking spray and pour the batter into the loaf tins. Bake for 30-35 minutes or until a toothpick is inserted and comes out clean.
If you don't have muffin liners, you can spray the muffin tins with cooking spray and add the batter right to the muffin tins. Cupcake liners make the muffins easier to take out of the muffin tins. Amazon has silicone cupcake liners or paper cups to use, and those would both be great to use too!
