When the weather gets chilly, everyone is looking for delicious soups to serve their whole family. The great thing about this recipe is that is is incredibly versatile. Use your family's favorite veggies in this soup and serve with some homemade cornbread, sourdough dinner rolls, 2 ingredient sweet potato rolls, or Instant Pot dinner rolls.
Pressure cooking is the best way to make soup! You add all the ingredients to your Instant Pot, close it, and then come back when you are ready to eat. It's so good and the perfect way to feed your family when you are short on time and don't want to do a ton of dishes.
Ingredients To Gather
You only need a few basic ingredients for this easy recipe that you can easily find in your local grocery store.
- Lean ground beef. You will need one pound ground beef. I use 93/7 so this recipe is not too fatty.
- Olive Oil. To saute the veggies in.
- Hearty Vegetables. Celery, onions, bell pepper, garlic cloves, and two potatoes.
- Seasoning. Italian seasoning and salt and pepper.
- Tomato. You'll need tomato paste and diced tomatoes. If you don't have diced tomatoes you can use one small can of tomato sauce instead.
- Beef broth. Beef stock or chicken broth can be used instead.

Let's Make Instant Pot Hamburger Soup!
Hit the saute function on the Instant Pot. Add the olive oil, chopped onions, chopped celery, chopped bell pepper, and minced garlic. Saute for 5 minutes until the vegetables are soft. Add the Italian seasoning and tomato paste and stir the ingredients together.
Add the ground beef and cook it for 4-5 minutes stirring constantly until the ground beef starts to brown.
Top the beef with the chopped potatoes. Add the remaining ingredients and cancel the saute function. Close the lid of the Instant Pot and make sure the lid is set to the sealing position.
Cook on high pressure and set the cook time to 10 minutes. After the 10 minute cooking time, quick release the pressure. Serve immediately with shredded cheddar cheese.
Lynn's Tip! Be very careful when releasing the pressure as some of the broth may come up the top of the lid. Steer clear of the steam when it starts to release.
Variations
- Change the ground meat! If you don't have lean beef, you can use ground turkey or ground chicken instead. If you have leftover ground beef you can also add that to this ground beef vegetable soup too.
- Change up the veggies! Use green beans, sweet potatoes, green peppers, or your favorite root vegetables. A bag of frozen vegetables would work in this hamburger soup recipe.
- Change up the starch! You can use red potatoes, Yukon gold potatoes, or even pasta in this recipe.
- Change up the spices! Use garlic powder instead of fresh garlic, add Worcestershire sauce, or whatever you family favorite spices are.
Storage Tips
Store leftovers in an airtight container up to 4 days in the refrigerator. You can reheat the soup on the stovetop or in the microwave for a few minutes.
This soup is very freezer friendly too! Store the cooled soup in an airtight container for up to 3 months in the freezer.
Questions About Instant Pot Hamburger Soup
Yes! Saute all the veggies and the ground beef in a Dutch oven or a large pot. Cook until the beef is browned. Add the tomatoes and beef broth and cook for 20-25 minutes until the potatoes are soft and cooked through.
It should take 10-15 minutes for the Instant Pot to come up to pressure. If the beef broth is cold, it will take longer for the Instant Pot to come up to pressure. Be patient, it will get there.
It depends on the size of your Instant Pot. A big batch of this soup might not fit in the Instant Pot. You would want to make one batch, remove it from the Instant Pot, and then make another batch. My Instant Pot was full with this soup and would not be able to fit any extra ingredients in it.
