This Instant Pot recipe is the perfect dinner to make when you don't have a ton of time, but you want a ton of flavor in your dinner! Your electric pressure cooker does the hard work for you and you can enjoy a delicious dinner in no time!
When you can't make cabbage rolls, this soup is kind of like unstuffed cabbage rolls. You get all the flavor of cabbage rolls but in a portion of the time.

Ingredients You'll Need
- Olive oil. To sauté the veggies in.
- Onions and carrots. Cut into small pieces.
- Lean ground beef. I like to use 85/15 or 93/7 for soups.
- Beef broth. You can use homemade or premade. Low sodium is best so the soda is not too salty.
- White rice. Uncooked rice, to avoid overcooking the rice.
- Cabbage. 4 cups chopped. Depending on the size of the cabbage, you might need a whole head of cabbage or a half of a head.
- Tomato sauce. One 8 ounce can.
- Diced tomatoes. For more tomato flavor.
- Worcestershire Sauce. For a depth of flavor.

- Instant Pot- You'll need at least a 6 quart Instant Pot or the soup won't fit.

How To Make Instant Pot Cabbage Roll Soup
Turn the Instant Pot on "saute". Add the olive oil and the ground beef to the bottom of the pot. Break up the beef into small pieces and let the beef cook for 3-4 minutes.
While the beef cooks, remove the outer cabbage leaves and discard them. Cut the cabbage into small pieces. You will want 4 cups of cabbage pieces.
Cut the onion and carrots into small pieces. Add the chopped onions and carrots to the Instant Pot and saute for 2 minutes. Add the rest of the ingredients. Turn the saute function off and put the cover on the Instant Pot.
Set the Instant Pot to high pressure for 15 minutes. Let the Instant Pot natural release for another 15 minutes. Quick release the rest of the pressure and stir the soup.
Tips and Tricks
- The Instant Pot will take 8-10 minutes to come up to pressure depending on how cold the broth is.
- Be very careful when releasing the pressure of the soup as some of the broth may come up from the knob on the top of the lid.
- Do not overfill the Instant Pot. Each Instant Pot has a line on it saying how high to fill it. Do not overfill past that or the Instant Pot will not come up to pressure.
- Serve this tasty soup with sour cream and some fresh parsley chopped.
Variations
- Change up the rice! If you don't want to use white rice, use brown rice instead. Increase the cooking time to 25 minutes instead of 15 minutes.
- Change up the meat! Feel free to use ground turkey, ground chicken, or a combination of ground pork and ground meat.
- Change up the liquid! If you don't have beef broth, feel free to use chicken broth, vegetable broth, or 4 cup of water for the liquid.
- Change up the tomato! If you don't have tomato sauce, you can use a can of tomato soup if 1 tablespoon of tomato paste.
- Add some more veggies! I love adding all sorts of veggies to my soup. You can add zucchini, red bell pepper, mushrooms, or even diced jalapenos into the soup.
- Add some spices! If you like spicy, add some crushed red pepper to the soup. You can also add some of your favorite spices into the soup like cayenne pepper, garlic powder, or onion powder.
Storage Instructions
Store leftover unstuffed cabbage roll soup in an airtight container. It will stay fresh in the refrigerator up to 4 days.
Add the soup to freezer bags or freezer safe containers. Freeze them for up to 3 months. To defrost, add the soup to a pan and warm in on the stove.

Yes! You will have to cook the ground beef on the stove top until brown. Add it to the crock pot and then add the rest of the ingredients. Cover and cook for 4 hours on high or 8 hours on low. Serve immediately.
To avoid the dreaded burn warning on your Instant Pot, make sure to stir the broth into the Instant Pot well to avoid having anything stick to the bottom of the Instant Pot.
The precooked rice will become mushy and overcooked under the pressure of the Instant Pot. If you have precooked rice, stir it into the completely cooked soup before serving it.
