Why You'll Love Red Velvet Cake Mix Cookies
- They are made with minimal effort! The great thing about this red velvet cookies recipe is that you mix and bake! No need to wait or chill the dough. I'll often see a box of cake mix in the pantry, realize I want to make cookies, and bake them! In less than a half hour I'll have freshly baked cookies.
- You only need a few ingredients! All the ingredients in these cookies you probably already have in your house.
- They have that classic red color! When you think of red velvet cake, it has that really deep red color. These red cookies are no different! When it's that time of year when everything is red, these are the cookies to make!
Ingredients to Gather
You only need a few simple ingredients to make these delicious red velvet cake cookies!
- Red Velvet Box of Cake Mix. The baking aisle in the grocery store has so many different types of cake mix! During Valentine's Day, you can usually find red velvet everywhere. I love making red velvet cinnamon rolls too!
- Vegetable oil. A neutral oil is best here. It helps give these easy cookies that delicious chewy texture.
- Flour. You might think it's strange to add flour to the batter, but I find that cake mix cookie recipes tend to spread out a lot. The flour helps give the cookie batter a little more structure so they will not spread as much as they usually would.
- Eggs. The eggs help keep the cookies together.
- Powdered sugar. We will roll the cookie dough balls in the powdered sugar and then bake them so they get that classic crackle crust.

Substitutions and Variations
- Canola oil, coconut oil, or melted butter can all be used instead of vegetable oil.
- Mix white chocolate chips into the cookie batter for a little extra sweetness.
- Instead of rolling the cookies in powdered sugar, make a cream cheese frosting! Mix together 2 ounces of cream cheese, ⅓ cup powdered sugar, and 1 tablespoon of milk in a large bowl. With an electric mixer, mix until smooth and then drizzle over the chewy red velvet cookies.
- If you cannot find red velvet cake mix in the grocery stores, use a Devil's food cake and add about 10 drops of red food coloring.
How To Make Red Velvet Cake Mix Cookies
Tips and Tricks
- Make sure the large baking sheet is lined with parchment paper. Since these cookies are rolled in powdered sugar, they can easily stick on the bottom of the baking sheet.
- Use a cookie scoop to make sure all the cookies are the same size. A tablespoon measuring spoon can be used too.
- A stand mixer or hand mixer are great options to mix the cookie dough. The dough is very stiff, so it can be hard to mix them together with just your hands.
Storage Tips
To make the dough ahead of time, make the dough completely and then cover the bowl with plastic wrap. Keep the dough in the refrigerator for up to 3 days before you need it. When you are ready to bake it, scoop the dough balls and roll them in powdered sugar and place them onto a prepared cookie sheet and bake cookies immediately.
Keep leftover cookies in an airtight container on the counter for up to 5 days.
These cookies freeze well too! Once they are baked and cooled to room temperature, place the baked cookies in a Ziploc bag or a freezer safe container. Freeze them for up to 3 months. Defrost them right on your counter and enjoy them when they are fully defrosted.
Recipe FAQs
Depending on how big you make the cookies will depend on how big the cookies will be. I was able to make 24 cookies with a small cookie scoop.
It's essentially chocolate, but the vinegar and buttermilk in the batter make the chewy, fudgy texture and flavor we have come to recognize from red velvet recipes.
No, you don't have to. You can add chocolate chips, white chocolate chips, or even a cream cheese filling to the cookie dough.
