Chewy Red Velvet Crinkle Cookies with Cake Mix

- 1 Box Red Velvet Cake Mix Duncan Hines, Betty Crocker, or store brand.
- 2 Eggs
- ½ cup Vegetable oil or another neutral oil
- ¼ cup Flour
- 1 cup Powdered Sugar
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large mixing bowl, empty the boxed cake mix and add the flour. Mix well.
Add the eggs and oil. Mix well until a dough forms. The dough will be very stiff, so a stand mixer or hand mixer is a good option.
With a small cookie scoop, scoop out some of the dough.
Roll the dough ball in the powdered sugar until it is fully covered. Place the dough onto the prepared baking sheet.
Bake for 10-12 minutes or until the cookies are baked. Once the cookies are done, let them cool on a wire cooling rack.
- Canola oil, avocado oil, coconut oil, or melted butter can all be used instead of vegetable oil.
- Mix white chocolate chips into the cookie batter for a little extra sweetness.
- Instead of rolling the cookies in powdered sugar, make a cream cheese frosting! Mix together 2 ounces of cream cheese, ⅓ cup powdered sugar, and 1 tablespoon of milk in a large bowl. With an electric mixer, mix until smooth and then drizzle over the chewy red velvet cookies.
- If you cannot find red velvet cake mix in the grocery stores, use a Devil's food cake and add about 10 drops of red food coloring.
