Ingredients

  • 1 Box Yellow Cake Mix
  • ¼ cup Butter Cubed
  • 1 cup Brown Sugar
  • 3 large Eggs
  • 1 ½ cups Sour Cream
  • 1 can Apple Pie FIlling 21 ounce can
  • 1 teaspoon Ground cinnamon

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish with cooking spray or melted butter. Set that aside.
  • In a small mixing bowl, add ½ cup of the cake mix, brown sugar, and the cubed butter. Mix the ingredients well until a crumble forms. Set that aside.
  • In a large bowl, add the rest of the cake mix, the eggs, sour cream, and ground cinnamon. Mix well until all the ingredients are combined.
  • Open the can of apple pie filling and chop the apples on a cutting board. Rough chop them so the apples are smaller, into about 1 inch pieces.
  • Add the apples to the large mixing bowl with the cake batter. Mix well.
  • Pour the cake batter into the prepared baking dish. Evenly sprinkle the brown sugar crumble to the top of the cake. Bake the cake for 35-40 minutes or until the top of the cake is golden brown and a toothpick is inserted and comes out clean.
  • Serve this cake with a sprinkle of powdered sugar or your favorite whipped cream.

Notes

  • To make the filling even easier to mix together, use an electric mixer. Mix the batter on low speed and then mix in the apple filling with a wooden spoon so the apples do not get chopped too small.
  • To easily mix the brown sugar crumble, use a pastry blender. This will mix the streusel topping well and it will get the job done quickly.
  • Store leftover coffee cake on the counter topped with plastic wrap or parchment paper. It will stay fresh for up to 4 days. You can also cut the cake into pieces and place the pieces in an airtight container for up to 4 days.
