  • They are made with a few simple ingredients. You only need a few simple ingredients that you probably already have in your house. If you don't have them in your house already, they can easily be found in your local grocery store. It's easier than you may think to make homemade pancakes.
  • There's nothing better than homemade pancakes! Don't buy the premade frozen ones at the store. This is the best pancake recipe for light and fluffy pancakes that are perfect for any morning. If you are going to make pancakes ahead of time and want to make a full batch, these strawberry banana pancakes, almond milk pancakes, pancakes with self-rising flour, and cottage cheese pancakes are all great options!

Ingredients for Single Serving Pancakes

The pancake recipe for one ingredients are labeled.
  • All purpose flour. Self rising flour can be used instead, you would just need to leave out the baking powder in this recipe. A combination of whole wheat flour and all purpose flour can be used too, you might need to add a little more milk if the pancake batter is too thick.
  • Milk. I like whole milk in my pancakes, but soy milk, almond milk, 2%, or even skim milk would all work in this recipe.
  • Baking powder. This makes these easy pancakes nice and fluffy.
  • Melted butter. This adds texture and fat to the pancakes. Coconut oil or vegetable oil can both be used instead of melted butter.

How To Make Pancakes for One

The milk, sugar, and melted butter are mixed together in a large bowl.
Step 1: In a medium bowl, add the milk, sugar, and melted butter. Mix well.
The egg is added to the large bowl.
Step 2: Crack the egg into the bowl and mix until combined.
The dry ingredients are added to the wet ingredients.
Step 3: Mix the dry ingredients into the bowl with the wet ingredients. Do not overmix, it's ok if there are a few lumps left in the pancake batter.
The pancake batter is in a large skillet.
Step 4: Spray cooking spray into a large skillet or melt a small amount of butter in the skillet. Add ⅓ cup batter into the pan. Cook for 2-3 minutes on one side and then flip to the other side. Cook for another minute and remove from heat. Continue with the rest of the batter.

Tips For Making The Perfect Pancake

  • Do not push down on the pancakes when you flip them. Though it might be tempting to push down on the pancakes, if you want perfect pancakes, just let it hang out and cook in the pan or hot griddle.
  • The pancakes are ready to flip when the middle bubbles. Small bubbles will start to come through the pancake batter and show on the surface of the pancakes. The edges of the pancakes will also start to dry out. When you see these two signs, it's time to flip the pancakes to the second side.
  • Use an ice cream scoop or a measuring cup to measure the batter. This ensures the pancakes are all the same size will cook evenly and you make the best pancakes you can make.
  • Do not cook the pancakes too high. Medium-low heat to medium heat is the best for cooking pancakes. Anything higher than medium-high heat will be too high and the outside will be too cooked and the inside will be raw. Too low and the pancakes will take a long time to cook.

Variations of Pancakes for One Recipe

  • Add some spices! Add a teaspoon of cinnamon, vanilla extract, or pumpkin spice seasoning to kick up the flavor!
  • Make them chocolate chip! Chocolate chip pancakes are a staple in my house. My kids love a 1 tablespoon of semisweet chocolate chips added to the pancake batter!
  • Make them blueberry! Add 1 cup of fresh or frozen blueberries to the batter to make them blueberry pancakes

Storage Tips

If you find that you made too much batter or this is too much pancake for you to eat, no worries! It is really easy to store both the pancake batter and the cooked pancakes.

How to store the batter. Once the pancake batter is mixed together, cover the batter with plastic wrap or place it in an airtight container. The batter will stay fresh in the refrigerator up to 24 hours.

How to store leftover pancakes. Once the homemade pancakes are cooked, place the cooked pancakes in an airtight container and keep them in the refrigerator up to 4 days. To reheat them, place them in the toaster oven for 1 minute in a single layer or until the pancakes are warm. You can also reheat the pancakes on the stovetop in a dry pan over medium-low heat.

To keep the pancakes warm, after they are cooked place them on a parchment paper lined baking tray or baking sheet and keep them warm in a 200 degree oven.

How to freeze the pancakes. Once the pancakes are cooked, allow them to cool completely. Wrap them in plastic wrap and place them in a Ziploc freezer bags. Freeze the pancakes up to 4 months. To reheat the pancakes for a quick breakfast, place them in the toaster oven for 2 minutes or reheat them in a hot pan over the stovetop

Can I use egg whites instead of a whole egg?

Sure! To cut the fat a little feel free to use 2 egg whites instead of one whole egg.

Can I use pancake mix instead of all purpose flour?

Yes! You can use the same ratio or ingredients to make single serving pancakes for one. When you are using pancake mix though, make sure you leave out the baking powder or the pancakes might become too bitter.

How can I make these thinner pancakes?

If you have a family member or yourself that likes thinner pancakes, simply add a little more milk to the batter to thin it out.

Ingredients

  • ¾ cup All Purpose Flour
  • ½ teaspoon Baking Powder
  • ½ tablespoon Sugar
  • 1 Egg
  • ½ cup Milk Whole, almond, soy, or your favorite milk
  • 1 tablespoon Butter Melted

Instructions

  • In a medium bowl, mix together the melted butter, sugar, and milk. Crack the egg into the bowl and mix well.
  • Add the all purpose flour and baking powder to the bowl. Mix the dry ingredients into the wet ingredients until just mixed. Do not overmix. It's ok if there are a few lumps left in the batter.
  • Spray a large skillet with non-stick cooking spray or add a small pat of butter to a pan. Preheat the pan slightly. Add ⅓ cup batter to the pan and let it cook for 2-3 minutes over medium heat. When bubbles start coming to the surface of the pancakes it is time to flip the pancake.
  • Cook on the second side for another 1-2 minutes. Remove the pancake from the pan and continue this process with the rest of the batter. Serve immediately.

Notes
