Why You'll Love This Recipe

  • It's easy to make! When it's cinnamon roll season, this easy recipe is the one to make! There is no long kneading or long waiting!
  • You don't have to turn on the oven! That's because it is made entirely in the Instant Pot, so it's perfect on hot days!
  • The Instant Pot does the hard work! The Instant Pot will work as a slow cooker and gently help the dough proof, then we will cook the cinnamon rolls right in the Instant Pot under high pressure!

Ingredients You'll Need

The ingredients for the Instant Pot Cinnamon Rolls are laid out.
  • Flour. We are using all purpose flour for this recipe but if you have bread flour that would work too!
  • Active dry yeast. To make the cinnamon rolls rise.
  • Milk. You can use ½ cup of water, your favorite non dairy milk, 2% or like I did, whole milk.
  • Sugar. We will use sugar in both the dough and the cinnamon sugar mixture.

See printable recipe card for full information on ingredients and quantities.

Step By Step Instructions

The milk and active dry yeast are mixed together.
Step 1: In a medium bowl, add the milk and active yeast. Let that sit for 5 minutes.
The wet ingredients are added to the dry ingredients.
Step 2: In a large bowl or the bowl of stand mixer fitted with the hook attachment, flour, salt, butter, sugar, and yeast mixture. Mix for 3-4 minutes until a dough forms.
The dough is added to the Instant Pot.
Step 3: Lightly oil the Instant Pot or spray it with cooking spray and add the dough. Close the lid and set the Instant Pot to "Yogurt" for 90 minutes.
The dough has doubled in size.
Step 4: After 90 minutes, open the lid of the Instant Pot and remove the dough. It should have doubled in size.
The dough is rolled out.
Step 5: Roll out the dough until it is 14 inches by 10 inches, approximately.
The cinnamon sugar mixture is added to the dough.
Step 6: Spread the room temperature unsalted butter. In a small bowl mix together the cinnamon sugar and then sprinkle the cinnamon mixture over the dough.
The dough is rolled into a log.
Step 7: Roll the dough into a tight log and remove the end pieces that are uneven.
The dough is cut into equal pieces.
Step 8: Cut the log into 8 equal pieces. Meanwhile, spread butter over a small springform pan.
The cinnamon rolls are cut and in a springform pan.
Step 9: Place the homemade cinnamon rolls into the prepared pan and cover the pan with aluminum foil.
The pan is covered and in the Instant Pot.
Step 10: Place 1 ½ cups of water in the Instant Pot. Add the trivet insert and place the springform pan on top of the trivet. Set the Instant Pot to manual high pressure for 30 minutes. Let it natural release for 10 minutes and then release the remaining pressure.
The Instant Pot Cinnamon Rolls are ready and out of the Instant Pot.

Tips and Tricks

  • The Instant Pot will take 5-8 minutes to come up to pressure before it starts cooking.
  • When you open the lid of the Instant Pot there will be water on the aluminum foil. With a paper towel, soak up the warm water before you take the pan out of the Instant Pot.
  • Top these homemade cinnamon rolls with as much icing as you would like! The more the better in my opinion!
  • If you have a glass lid you can use it when proofing the dough. The dough is not a huge amount, so it does not rise too much in the Instant Pot.
  • If you want bigger cinnamon rolls, cut the dough into 5 or 6 pieces instead of eight pieces.

Storage Tips

Store leftovers in an airtight container on the counter. You can also cover the springform pan with plastic wrap and let them hang out on the counter for up to 5 days. They are great room temperature or you can heat them in the toaster oven or the microwave for a minute or two.

Recipe FAQs

I don't have a springform pan, can I still make these?

Yes! You can use a glass bowl like a Pyrex bowl. As long as it is oven safe and can withstand the pressure of the Instant Pot.

Can I bake these in the oven instead of the Instant Pot?

Yes! Once the cinnamon buns are rolls out and placed in the springform pan, feel free to bake them in the oven for 30 minutes instead of the Instant Pot.

Why are my cinnamon buns dense?

It's important to make sure the yeast is not expired. Also make sure that the milk is not too hot. If it is too hot it will kill the yeast. The milk should be just above room temperature, so the chill is taken out.
