In the Summer, and June especially, strawberries are everywhere! You can find them in every grocery store and at every Farmer's market. They are so juicy and so delicious!
Put those strawberries to good use and make Kefir ice cream! It's a refreshing and easy to make ice cream that doesn't require any churning! Simply blend the ingredients and freeze! This ice cream would go perfectly with my 3 ingredient strawberry fluff dip!
Kefir is perfect to bake with too! You can make vanilla muffins, peach donuts, kefir pancakes, kefir cornbread, blueberry kefir bread, kefir mixed berry smoothies, and even kefir snickerdoodles!

Ingredients In Strawberry Kefir Ice Cream
- Strawberry Lifeway Kefir
- Fresh strawberries- Hulled and cleaned.
- Lemon juice- To add a tangy kick and protect the color of the berries in the freezer.
- Maple Syrup- To make the ice cream just a little sweeter.
What is Kefir?
Kefir is a tart and tangy cultured milk. It is full of good for you probiotics and is high in calcium and protein. In this recipe, we are using kefir where you would normally use buttermilk. The consistency is a little thicker than buttermilk and gives this strawberry ice cream a tang that you don't get from regular milk.
Let's Make Strawberry Kefir Ice Cream!
Clean the strawberries and cut off the stem portion of the strawberries. Place them in a high-speed blender. Add the lemon juice, maple syrup, and strawberry Kefir.
Blend on high speed for 1 minutes until creamy.
Pour the mixture into a freezer-safe container and freeze for 4-5 hours until frozen solid.
When ready to use, scoop the ice cream into a bowl and enjoy!
