Scones are the perfect recipe to make for a brunch or breakfast. They are easy to make and they do not need any heavy equipment like a food processor or a stand mixer. They are buttery and delicious! The best part is, you can add anything you want to scones too! More on that later!

What is Kefir?
Kefir is a tart and tangy cultured milk. It is full of good-for-you probiotics and is high in calcium and protein. In this recipe, we are using kefir where you would normally use buttermilk. The consistency is a little thicker than buttermilk and gives the bread a tang that you don't get from regular milk or water.
Ingredients You'll Need
- Whole Milk Kefir. Lifeway is my favorite brand!
- All purpose flour. Bread flour will work too.
- Leavening agents. You will need both baking soda and baking powder.
- Butter. Refrigerated or very cold.
- Sugar. To give the scones a little sweetness.
Let's Make Kefir Scones!
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, add the flour, salt, baking powder, and baking soda. Mix well to combine.
Cut the butter into pieces and add the butter to the large bowl. Mix the butter into the flour with your hands or with a wooden spoon. Add the kefir and mix until the ingredients are just combined.
Lynn's Tip! Do not overmix the mixture. It should be crumbly and the butter pieces should be visible in the mixture.
Place the mixture onto a lightly floured surface. Form the dough into a disk. It will be crumbly, but the dough will form into a disk.
Cut the disk into 8 triangles. Place the triangles on the prepared baking sheet. Brush the top of the scones with heavy cream and sprinkle with sugar. Bake for 15-18 minutes or until the scones are just golden brown. Serve immediately.
Variations
- Serve these scones with strawberry jam, peach jam, mixed berry jam, or apple butter.
- Add chocolate chips! Mix in chocolate chips into the batter.
- Mix in berries! Add in blueberries or strawberries for a fruity scone.
- Add flavorings! You can use a flavored kefir or you can add in vanilla extract.

Yes! These scones freeze beautifully! Cool them to room temperature and place them in a gallon sized Ziploc bag. Freeze them for up to 3 months.
Once the scones are cooled to room temperature, place them in an airtight container for up to 4 days.
Yes! You can use a biscuit cutter instead of cutting them into triangles. Bake them as you would the triangles.

- ½ teaspoon Baking Soda
- 1 cup Butter Cold
- 1 cup Kefir

- Add the cut up butter and kefir to the bowl. With your hands, mix until the ingredients are just combined.
- Place the dough onto a lightly floured surface. Shape it into a disk. Cut the disk into 8 pieces. Place the pieces onto the prepared baking sheet and bake for 15-18 minutes or until the scones are golden brown.
Notes
- Place the baked scones into an airtight container for up to 4 days.
- Freeze the scones for 3 months.
- An optional step is to brush the tops of the scones with heavy cream and sprinkle them with a little bit of sugar.

Did you mean 1 stick of butter or 1 cup? Mine were floating in butter as hey baked. They are still delicious just a lot of wasted butter.
