    Easy Pumpkin Bread with Cake Mix

    When it's the time of year that the weather starts to get crisp and the pumpkin spice cravings start, pumpkin bread is the way to go! No need to break out a ton of ingredients, all you need is a box of cake mix, a can of pumpkin, some eggs, and cinnamon. In no time you will have the most delicious pumpkin bread that is so easy to make!

    Ingredients You'll Need

    • A box of spice cake mix. In the Fall the cake mix is easy to find next to the other cake mixes in your local grocery store. Betty Crocker makes spice cake, as does Duncan Hines.
    • Canned pumpkin puree. Not canned pumpkin pie, that would overpower the bread with too much pumpkin spice.
    • Eggs. This will hold the bread together.
    • Cinnamon. To give the bread a little extra spice.

    Pumpkin Puree vs. Pumpkin Pie Filling

    This recipe has canned pumpkin puree, which is just pure fresh pumpkin that has been cooked down and pureed. Canned pumpkin pie is essentially the inside of a pumpkin pie. It has all the spices already in it. When making this recipe, make sure it's pure canned pumpkin. Canned pumpkin pie will double the spices, which would overpower this bread with cinnamon and pumpkin pie spice.

    • Hand Mixer or stand mixer
    • Large bowl

    • Loaf Pan
    • Wire Rack

    Let's Make Pumpkin Bread with Cake Mix

    Preheat the oven to 375 degrees. Grease a loaf pan with melted butter or cooking spray. You can also line the loaf pan with parchment paper to make it easier to get the bread out of the pan. Set the greased loaf pan aside.

    In a large mixing bowl, add the box of dry cake mix, two eggs, can of pumpkin, and cinnamon. Mix the ingredients with the hand mixer starting on low speed and then increasing to medium speed.

    Pour the pumpkin bread batter into the prepared loaf pan. Place the loaf pan in the preheated oven and set the bake time to 45-55 minutes.

    While the bread bakes, mix together the cinnamon, powdered sugar, and milk. If you would like a thicker icing, add more powdered sugar. If you prefer a thinner icing, add a teaspoon more milk at a time until the desired consistency is reached.

    When the pumpkin bread is done, allow it to cool slightly and then take it out of the loaf pan and place it on a wire rack. When the bread comes to room temperature pour the icing over the top of the bread and serve immediately.

    Tips and Tricks

    • The bread is done when a toothpick is inserted into the loaf pan and comes out clean.
    • Lining the loaf pan with parchment paper will make it easier to remove the bread from the loaf pan.
    • Make sure the bread is cool before you add the glaze, or the glaze will melt off the bread.

    Variations

    • Add a cream cheese swirl! Mix 1 tablespoon of milk with 4 ounces of cream cheese and swirl it into the batter before baking.
    • Make them mini! You can either separate the batter into mini loaf pans or you can bake them in muffin tins.
    • Add chocolate! The chocaholic in me is looking to add chocolate to every recipe! White chocolate chips or semi-sweet chocolate chips would be delicious to add to the pumpkin bread batter. It would be a delicious afternoon treat with a cup of coffee!

    I can't find a box of spice cake mix. What other boxed cake mix can I use?

    If you can't find spice cake mix, no worries! You can use yellow cake mix or white cake mix. Add two teaspoons of your favorite pumpkin spice mix and 1 teaspoon of cinnamon.

    How long will this bread stay fresh?

    This is a very moist pumpkin bread, so you want to make sure to keep it in an airtight container, so it does not go stale or get moldy. The bread will stay fresh in an airtight container or gallon Ziploc bag for up to 4 days. Keep the bread on the counter, do not refrigerate it as it will go stale quickly in the refrigerator.

    Can I freeze this bread?

    Yes! Do not ice the bread if you are going to freeze it. Wrap the cooled bread in plastic wrap and place it in a gallon Ziploc bag. Freeze the bread for up to 3 months and allow it to defrost on the counter. Drizzle with icing before serving.
