    We all have a box of brownie mix in the pantry, why not change it up and turn them into the best chocolate cookies ever! These cookies have cream cheese added to the brownie batter, giving them a soft, gooey chocolate texture that no one can resist!

    Using cake mix or brownie mix as a shortcut in baking is so smart and so simple!     Ingredients To Gather

    • Box of brownie mix. Use your favorite brownie box mix that would you find at your local grocery stores. Betty Crocker, Duncan Hines, or store brand are all great.
    • Butter. One stick or ½ cup of butter at room temperature. Don't use melted butter or you will have to refrigerate the dough before cooking.
    • Cream cheese. Full fat cream cheese is best. It should be at room temperature as well, so it is easy to combine into the cheesecake batter.
    • Eggs. The eggs keep the cookies together.
    • Semi-sweet chocolate chips. I like using mini chocolate chips because you get more bang for your buck. The chocolate chips are incorporated into every bite of the cookies.

    Cream cheese helps gives the cookies an ooey gooey texture and just a bit of tang.

    Boxed brownie mix can be a bit boring, by adding extra ingredients to the premade mix, you can create a delicious, fudgy cookie! The cream cheese makes the cookies taste extra decadent. It's the secret ingredient that everyone will be asking about when you serve these cookies to the chocolate lovers in your life!

    Equipment You'll Need

    • Large bowl. Big enough to make a batch of brownies. Don't use a small bowl or a medium bowl or you might have brownie mix all over your kitchen.
    • Electric Mixer. A hand mixer or a stand mixer will work.
    • Large Cookie Scoop
    • Baking Sheet lined with parchment paper or a silicone mat.

    Let's Make Brownie Cookies with Cream Cheese!

    Preheat your oven to 375 degrees. Line a baking sheet with parchment paper or a silicone mat.

    In a large bowl, add the butter and cream cheese. Cream the butter and cream cheese together with your hand mixer on medium speed for 1 minute until light and fluffy.

    Add the egg and brownie mix. Mix again until the ingredients are combined.

    Sprinkle the chocolate chips into the brownie cookie batter and mix them into the batter with a wooden spoon or a rubber spatula.

    With an ice cream scoop, scoop the cookie batter onto the prepared baking sheet. Bake them to 10-12 minutes or until the outside of the cookies is crispy and slightly golden brown.

    • Instead of butter, you can use vegetable oil or coconut oil. Refrigerate the dough for 20-30 minutes before baking to the dough can firm up a bit.
    • This is a gooey cookie recipe, so they may look like they are not fully baked after 10-12 minutes. You want the center to be slightly soft, so don't bake them for more than 12 minutes.
    • Allow the cookies to cool completely on the baking sheet before removing them. You run the risk of breaking the cookies if you try to remove them too soon after being taken out of the oven.

    • Make them peanut butter brownie cookies! Add 1 cup of peanut butter chips into the brownie cookie batter for more peanut butter flavor.
    • Use white chocolate chips! To add a little extra sweetness, use white chocolate chips instead of semi-sweet chocolate chips.
    • Make sandwich cookies! Use a cream cheese frosting that you can find at the grocery store and sandwich the cream cheese filling between two cookies.

    You can use your favorite brownie mix! If you have a favorite gluten free brownie mix, you can use that too! Dark chocolate, double chocolate, or brownies with chocolate chips already in the mix will just add to the big chocolate flavor!
