Chicken Tetrazzini is a dish that is full of diced chicken or turkey, sliced mushrooms, and served in a creamy cheese sauce. It was originally named after an opera singer, opera star Luisa Tetrazzini. It can be baked as a casserole and topped with breadcrumbs, or cooked on the stove top in a Dutch oven.
This chicken tetrazzini is made completely in your Instant Pot. The pasta comes out perfectly al dente and the sauce is creamy and delicious!
Ingredients You'll Need
- Boneless skinless chicken breasts- One pound, cut into cubes. Depending on what your grocery store has, this might be one or two breasts.
- Butter- If you prefer, feel free to use olive oil.
- Mushrooms- 8 oz of mushrooms, cremini or button mushrooms.
- Flour- To thicken the sauce and make it creamy.
- Spaghetti Noodles- Use your favorite variety.
- Chicken broth- Vegetable broth, chicken stock, or water can be used instead. Use low sodium broth so you can control the salt level. If you have homemade chicken broth that would be delicious in this chicken tetrazzini recipe!
- Sour Cream- Full fat is best, but you can use low fat if you prefer.
- Italian Seasoning
- Parmesan- to make it extra cheesy!
- Salt and black pepper- Add at the end to your liking.

How To Make Instant Pot Chicken Tetrazzini
Set the Instant Pot to "Sauté." Add two tablespoons of butter to the Instant Pot and let it melt. Chop the chicken breast into small, bite sized pieces. Add the cubed chicken breasts to the melted butter and cook for 5-7 minutes until the chicken is slightly browned.
Slice the mushrooms and add them to the Instant Pot. Cook for 2 minutes until slightly softened. Add the flour and Italian seasoning. Stir and cook for 1 minutes. Add the 4 cups chicken broth and spaghetti. You will likely need to break the spaghetti to get it to fit in the Instant Pot.
Hit the cancel button to cancel the "sauté" function. Cover the Instant Pot and set to "high pressure" for 4 minutes. After 4 minutes, quick release the pressure by manually releasing the pressure on the lid.
Open the lid and add the sour cream and parmesan cheese. Stir to thicken the soup and to combine the cheese in the pasta. Add salt and pepper to taste and serve immediately.

- When you first open the Instant Pot lid, the pasta might look a little soupy. As you stir in the sour cream and parmesan cheese, the pasta will begin to thicken up.
- Use leftover rotisserie chicken if you have some available. You won't have to sauté the chicken very long, only a few seconds to heat it up.
- Low sodium chicken broth will allow you to control the amount of salt in the dish. Vegetable broth or water can be used instead of chicken broth.
- If the pasta is still too soupy, press the "sauté" button and cook the pasta for 2-3 additional minutes. Stir constantly so the pasta doesn't burn to the bottom of the instant pot.

Delicious! Easy weeknight dinner sorted! The only thing I did different was I removed the chicken and mushrooms after they were cooked in the flour and seasonings, added the spaghetti noodles and broth to the pot and then put the chicken and mushrooms back on top of the noodles. This just helped to keep my noodles submerged in the broth while they cooked. Perfect!
