    One of the best things about an Instant Pot is how fast it cooks pasta! There's no need to break out the big pots and pans to get this dinner on the table. Everything is cooked directly in your electric pressure cooker!

    Chicken tetrazzini is often made with cream of mushroom soup, but in the past few years I've tried to move away from those condensed soup cans. And in this recipe, you won't miss it!

    The sour cream and parmesan cheese add so much creaminess to the pasta. Mixed with the starchy broth from the spaghetti, this Instant Pot Chicken Tetrazzini is a comforting recipe your family is sure to love!

    What is Chicken Tetrazzini?

    Chicken Tetrazzini is an American dish that is full of diced chicken or turkey, sliced mushrooms, and served in a creamy cheese sauce. It can be baked as a casserole and topped with breadcrumbs, or cooked on the stove top in a Dutch oven.

    This chicken tetrazzini is made completely in your Instant Pot. The pasta comes out perfectly al dente and the sauce is creamy and delicious!

    Ingredients You'll Need

    Ingredients for Instant Pot Chicken Tetrazzini
    • Boneless skinless chicken breasts- One pound, cut into cubes. Depending on what your grocery store has, this might be one or two breasts.
    • Butter- If you prefer, feel free to use olive oil.
    • Mushrooms- 8 oz of mushrooms, cremini or button mushrooms.
    • Flour- To thicken the sauce and make it creamy.
    • Spaghetti Noodles- Use your favorite variety.
    • Chicken broth- Vegetable broth, chicken stock, or water can be used instead. Use low sodium broth so you can control the salt level.
    • Sour Cream- Full fat is best, but you can use low fat if you prefer.
    • Italian Seasoning
    • Parmesan- to make it extra cheesy!
    • Salt and black pepper- Add at the end to your liking.

    Equipment For Instant Pot Chicken Tetrazzini

    • Instant Pot
    • Cutting Board
    • Knives

    How To Make Instant Pot Chicken Tetrazzini

    Set the Instant Pot to "Sauté." Add two tablespoons of butter to the Instant Pot and let it melt. Chop the chicken breast into small, bite sized pieces. Add the cubed chicken breasts to the melted butter and cook for 5-7 minutes until the chicken is slightly browned.

    Cook the mushrooms for 1-2 minutes.

    Slice the mushrooms and add them to the Instant Pot. Cook for 2 minutes until slightly softened. Add the flour and Italian seasoning. Stir and cook for 1 minutes. Add the chicken broth and spaghetti. You will likely need to break the spaghetti to get it to fit in the Instant Pot.

    Hit the cancel button to cancel the "saute" function. Cover the Instant Pot and set to "high pressure" for 4 minutes. After 4 minutes, quick release the pressure by manually releasing the pressure on the lid.

    Open the lid and add the sour cream and parmesan cheese. Stir to thicken the soup and to combine the cheese in the pasta. Add salt and pepper to taste and serve immediately.

    Tips and Tricks

    • When you first open the Instant Pot lid, the pasta might look a little soupy. As you stir in the sour cream and parmesan cheese, the pasta will begin to thicken up.
    • Use leftover rotisserie chicken if you have some available. You won't have to saute the chicken very long, only a few seconds to heat it up.
    • Low sodium chicken broth will allow you to control the amount of salt in the dish.  Vegetable broth or water can be used instead of chicken broth.
    • If the pasta is still too soupy, press the "saute" button and cook the pasta for 2-3 additional minutes. Stir constantly so the pasta doesn't burn to the bottom of the instant pot.

    Variations of Instant Pot Chicken Tetrazzini

    • Load up on veggies! Add double the amount of mushrooms, shredded zucchini, or broccoli to make this a filling family meal.
    • Use a different pasta! Chicken tetrazzini is classic with spaghetti, but you can use rotini, ziti, or even bow tie pasta if you want!
    • Change up the protein! Use rotisserie chicken, leftover turkey, leftover roasted chicken, or boneless, skinless chicken thighs in this chicken tetrazzini.

    What To Serve With Chicken Tetrazzini

    Serve chicken tetrazzini with garlic bread or homemade bread rolls.

    Frequently Asked Questions

    I don't have sour cream, what else can I use?

    You can use heavy cream in place of sour cream, whipped cream cheese, or you can use a low-fat sour cream. If you have it on hand, the condensed soup can of cream of mushroom and cream of chicken soup would work here as well.

    How should leftovers be stored?

    If you have leftovers, store them in an airtight container. They can hang out in the refrigerator for 4 days. To reheat, add a splash of water to the pasta and microwave in a microwave safe bowl for 2-3 minutes.

    Can I make this on the stovetop?

    Yes! To make this on the stovetop, saute the chicken breast, mushrooms, and butter for 5 minutes. Add the Italian seasoning and flour. Cook for 1 minute. Add the sour cream and parmesan cheese and let it simmer. While the chicken cooks, boil the pasta according to package instructions. When the pasta is cooked, reserve 1 cup of water from the pasta pot, and drain the pasta. Add the pasta to the pan with the chicken mixture. Mix well to combine and serve!

      Delicious! Easy weeknight dinner sorted! The only thing I did different was I removed the chicken and mushrooms after they were cooked in the flour and seasonings, added the spaghetti noodles and broth to the pot and then put the chicken and mushrooms back on top of the noodles. This just helped to keep my noodles submerged in the broth while they cooked. Perfect!
