    Ready in under 30 minutes, these Chewy Brown Sugar Cookies have no butter in them and are simple and delicious! When you don't have white sugar on hand, brown sugar makes an even more amazing cookie!

    Everyone loves classic sugar cookies, but when you use brown sugar instead of white sugar you get a cookie with a depth of flavor and a chewy texture that blows a sugar cookie out of the water!

    These cookies are made with no butter at all. We are replacing the butter with coconut oil and the cookies taste just as amazing as cookies with butter. If you are trying to reduce the amount of dairy in your diet, try these cookies!

    Ingredients For Brown Sugar Cookies No Butter

    • Dark Brown Sugar. Light brown sugar can be used as well.
    • All purpose flour
    • Baking powder. This is the leavening agent to give the cookie it's chewy centers.
    • Eggs. Two whole eggs.
    • Vanilla extract. Almond extract can be used instead of vanilla extract.
    • Melted coconut oil. Unrefined coconut oil tastes like coconut, and refined coconut oil does not taste like coconut as much. Based on your tastes, you can use either.

    • Stand Mixer or Electric Mixer
    • Measuring Cups
    • Measuring Spoons
    • Ice Cream Scoop
    • Baking Sheet
    • Parchment Paper
    • Wire Cooling Rack

    How To Make Brown Sugar Cookies No Butter

    Preheat the oven to 375 degrees. Line a cookie sheet with parchment paper, set that aside.

    In a medium bowl, mix together the flour, baking powder, and salt. Set the flour mixture aside.

    In the bowl of a stand mixer, or a large bowl, add the coconut oil and brown sugar. Cream the ingredients together for 1 minute on low speed. Add the eggs and vanilla to the bowl and mix again on medium speed until well combined.

    Add the dry ingredients to the bowl with the wet ingredients and mix again. Do not overmix at this point. You just want to flour to be incorporated.

    With an ice scream scoop, make even dough balls and place the dough balls on the cookie sheet.

    Place the baking sheet in the preheated oven, bake for 10-12 minutes or until the cookies have crisp edges and a soft center. Transfer the baked cookies onto a wire rack in a single layer and allow them to cool.

    • For best results, do not overmix the dough. Once the flour is added, simply mix until all the ingredients are combined together.

    Variations

    • Use another type of oil! Don't have coconut oil or don't like coconut oil, there are many different substitutes you can use. You can use vegetable oil, olive oil, or a butter substitute in place of coconut oil.
    • Add mix ins! Add white chocolate chips, chocolate chips, or cinnamon chips.
    • Dip these chewy sugar cookies in ice cream, Greek yogurt, or plain yogurt to up your breakfast game!

    These cookies will stay fresh 3-4 days in an airtight container at room temperature. Do not place these cookies in the refrigerator as they will go stale quickly.

    Yes! Once the cookies have cooled, place them in an airtight container or a Ziploc bag and place them in the freeze for up to 3 months. When you are ready to consume them, place them on the counter and allow them to come to room temperature before serving these delicious cookies.
