Brown Sugar Cookies (No Butter)

Ready in under 30 minutes, these Chewy Brown Sugar Cookies have no butter in them and are simple and delicious! When you don't have white sugar on hand, brown sugar makes an even more amazing cookie!

Ingredients

  • 2 ¼ cups All Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 2 cups Brown Sugar
  • ¾ cup Coconut Oil
  • 2 Eggs
  • 2 teaspoon Vanilla Extract

Instructions

  • Preheat the oven to 375 degrees. Line a cookie sheet with parchment paper, set that aside.
  • In a medium bowl, mix together the flour, baking powder, and salt. Set the flour mixture aside.
  • In the bowl of a stand mixer, or a large bowl, add the coconut oil and brown sugar. Cream the ingredients together for 1 minute on low speed. Add the eggs and vanilla to the bowl and mix again on medium speed until well combined.
  • Add the dry ingredients to the bowl with the wet ingredients and mix again. Do not overmix at this point. You just want to flour to be incorporated.
  • With an ice scream scoop, make even dough balls and place the dough balls on the cookie sheet.
  • Place the baking sheet in the preheated oven, bake for 10-12 minutes or until the cookies have crisp edges and a soft center. Transfer the baked cookies onto a wire rack in a single layer and allow them to cool.

Notes

  • A cookie scoop ensures the cookie dough balls are all the same size and the cookies will bake at the same time.
  • The baking time will vary based on your oven temperature. Keep an eye on the oven once the baking time hits 10 minutes.
