- Chicken. Boneless, skinless chicken thighs are full of flavor because it's a dark meat cut. Plus it is super easy to find in the grocery store. Skin-on chicken thighs can be used or boneless skinless chicken breasts. Cut the chicken into chicken pieces or leave them whole, it's up to you!
- Veggies. Red bell pepper, green bell peppers, onions, mushrooms, and garlic.
- Olive Oil. To saute both the chicken and the veggies in.
- Tomatoes. One 28 ounce can of diced tomatoes.
- Wine. We are using a dry white wine for this recipe but any type of red wine will work too for a deeper, rich flavor. Use a wine that you like to drink, try to stay away from a cooking wine if you can. Sauvignon blanc, cabernet sauvignon, or pinot grigio can all be used for this recipe.
- Seasonings. Black pepper, salt, and Italian seasoning.

Easy Oven Baked Chicken Cacciatore
Ingredients
- 3 tablespoon Olive Oil Divided
- 1.5 lbs Boneless, Skinless Chicken Thighs About 6 thighs
- 1 large Green pepper
- 1 large Red pepper
- 1 large Onion
- 1 pint Button Mushrooms
- 4 cloves Garlic
- 1 tablespoon Italian Seasoning
- ½ cup White Wine Like Pinot Grigio
- 28 ounce Diced Tomatoes
- Salt and Pepper to taste
Instructions
- Slice all the vegetables and set them aside. Chop the garlic and add it to the bowl with the vegetables. Set that aside.
- Preheat the oven to 400 degrees F.
- Add 2 tablespoons of olive oil to an oven safe pot or pan. A Dutch oven is a good choice.
- Set the heat to medium-high and add the chicken thighs to the pan. Cook for 3-4 minutes and flip. Cook for another 3-4 minutes. Remove the chicken from the pan.
- Add the other 1 tablespoon of olive oil to the pan. Add the sliced veggies to the pan. Cook for 2-3 minutes or until slightly golden brown and slightly softened.
- Add the tomatoes, white wine, Italian Seasoning, salt, and pepper to the pan. Place the chicken back into the pan on top of the vegetables.
- Cover the pan and place the pan in the oven for 20 minutes. After 20 minutes, remove the pan from the oven and serve with pasta, fresh herbs (if you would like), and parmesan cheese.
