Making bread can be a little intimidating for some. As long as you have good quality ingredients and a little patience, you should be able to have a delicious loaf of bread on the table in no time!

Ingredients You'll Need

- Flour- Bread flour makes the best bread. That's because it has more protein than regular all-purpose flour. If you only have all-purpose flour, you can use that.
- Instant Rise Yeast- 2 teaspoons or 1 packet.
- Honey- Honey helps the yeast activate and rise. You can substitute sugar for honey.
- Salt- To add flavor and to control the rise of the yeast. Bread without yeast will be bland and very holey. Salt keeps the yeast in check and doesn't let the rise get out of control.
- Olives- Your favorite variety. You can use all kalamata, all Spanish green olives, or a combination of both.
- Parmesan- Everything is better with cheese! Parmesan adds so much flavor to the bread. Grated Romano, pecorino, or a mixture of both would be a great substitute.
- Italian Seasoning- To add herb flavor to the bread
- Water- Lukewarm to help to yeast rise.
What Types Of Olives To Use
Use your favorite olives! Kalamata and Spanish green olives are my favorite, but if you find an olive medley in your grocery store, use that!
You can use pitted olives, just make sure to take the pits out before you add the olives to the dough. No one wants to be chomping down on an olive pit.

Active Dry vs Instant Yeast
In this recipe, we are using Instant Yeast. That means that you do not have to "bloom" the yeast in water before you add it to the dough.
If you only have active dry yeast on hand, no worries! Simply add the yeast to your warm water and let it sit for 5 minutes until it starts to get foamy. Then add it to the flour and salt.

- Liquid Measuring Cup
- Cutting Board

- Parchment Paper
- Dutch Oven

How To Make Olive Bread in the Instant Pot
- In the bowl of a stand mixer fitted with the hook attachment, mix together the flour, water, salt, yeast, and honey until combined. Add the olives, parmesan, and Italian seasoning.
- Turn the mixer on low for 5 minutes, until the dough comes together and does not stick to the sides of the bowl. If the dough is too sticky, add ¼ cup more flour as needed. It should be a little sticky, but not soupy.
- Spray the bowl of your Instant Pot with cooking spray or olive oil and place the dough into the Instant Pot.
- Close the Instant Pot and set it to "Yogurt" for 2 hours.
- After 2 hours, preheat the oven to 450 degrees and take the dough out of the Instant Pot and place it on a flour dusted counter.
- Shape the dough into a circle and place it on a piece of parchment paper. Place the dough and the parchment paper into a Dutch oven.
- Put the Dutch oven in the oven for 30 minutes. After 30 minutes, take the lid off the Dutch oven and cook for 15 more minutes or until the top is golden brown.
- Allow the bread to cool slightly before serving.

How To Serve Olive Bread
The possibilities are endless when serving this bread, but here are some options!
- Cut the bread into slices and toast. Serve with olive tapenade or fresh bruschetta.
- Add the bread to a charcuterie board alongside cheeses and olives.
- Serve the bread with a variety of dipping oils as an appetizer.

Olive Bread In The Instant Pot Without A Dutch Oven
The Dutch oven gives the bread a nice, crispy crust, by catching any of the steam given off by the bread. It also cooks the bread evenly so the bread cooks at the same time. If you don't have one, you can still make this recipe!
- Use an oven safe pot that has a lid.
- A large casserole dish that is oven safe and has a lid.
- Add the dough to a cast iron skillet and cover with aluminum foil

Questions About Olive Bread in the Instant Pot
Yes! If you don't have the "yogurt" setting on your Instant Pot, use the keep warm setting and then immediately turn it off. Add the dough to the Instant Pot, turn on "keep warm", and when it comes to temperature, turn off the Instant Pot. That will give the dough enough warmth to rise.
Once the bread is completely cooled, place it in a gallon Ziploc bag on the counter. Do not refrigerate the bread as it will go stale very quickly. The bread will last for 2-3 days in a closed Ziploc bag.
Yes! Once the bread is completely cooled, place the bread in a Ziploc bag and freeze for up to 3 months. When you are ready to defrost the bread, place the bread on the counter until it is defrosted.
Yes! Allow the dough to rise at room temperature for 4-6 hours until it doubles in size. Then bake as the recipe states.

Crusty Olive Bread in the Instant Pot
Equipment

- Use your favorite types of olives. Kalamata, Spanish olives, or a mixture of both.

- Keep this bread in a Ziploc bag on the counter for 2-3 days. Do not refrigerate.
- The bread is done when it is golden brown and sounds hollow when you tap on it. It can take up to 30 minutes with the lid off, but check after 15 minutes.

Loved it! I do have a question....have you tried baking the bread in anything else? We used the Dutch oven the first time but it is heavy and a bit awkward. Had to have my husband help me once it was done. Would a covered casserole dish work?

Yes! As long as it is oven safe and has a lid, I don't see why you wouldn't be able to bake bread in it.
