    Why You'll Love This Recipe

    • It's easy to make! There's nothing easier than a one pot meal! Chop the bell peppers and onions and add the rest of the ingredients to the Instant Pot. Let the Instant Pot do its thing and you'll have dinner on the table in no time!
    • It's great for a crowd! This recipe can easily be doubled or tripled to feed a crowd of people at your next party!

    Ingredients You'll Need

An overhead shot of the ingredients for Instant Pot Sausage and Peppers
    • Sausage- One pound of sweet Italian pork sausage.
    • Sweet Bell Peppers- Use your favorite colors of bell peppers. Red bell pepper, orange bell pepper, or yellow bell pepper can be combined with green peppers.
    • Onion- One large onion. I like using a vedalia onion because they are a large but sweet onion.
    • Chicken broth- A cup of water or vegetable broth can be used instead.
    • Diced Tomatoes- To add a depth of flavor and to help the ingredients cook. If you don't have a can of diced tomatoes, ½ cup of tomato sauce can be used instead. You can also mix one tablespoon of tomato paste into the chicken broth to give it some more tomato flavor.
    • Italian Seasoning- For even more flavor.

    Equipment To Gather

    • Instant Pot. I have a 6-quart Instant Pot that I love!
    • Cutting Board
    • Knives
    • Measuring Spoon

Let's Make Instant Pot Sausage and Peppers!

Wash the peppers and remove the stem and core. Cut them into strips. Set that aside.

Remove the peel from the onion. Cut the onion into strips. Set that aside.

Set the Instant Pot to saute mode for four minutes. Place 1 tablespoon of olive oil into the bottom of the Instant Pot. Place the uncooked sausages in the hot oil in the bottom of the pot. Brown the sausage for two minutes on each side. The sausage won't be cooked through at this point and that is ok. There's a lot of cooking left under the pressure of the Instant Pot.

Cancel the saute setting. Add the peppers, onions, diced tomatoes and their juice, and the Italian seasoning to the Instant Pot. Give the ingredients a good stir.

Close the lid of the Instant Pot and make sure the knob on the lid is set to the sealing position. Set the Instant Pot to high pressure and set the cooking time to 15 minutes.

After 15 minutes, allow the Instant Pot to natural release for 10 minutes. After 10 minutes, quick release any remaining pressure.

Remove the lid and serve the sausage and peppers immediately.

    How To Serve

    • This recipe is delicious in a big bulky roll, with crusty bread, or sourdough dinner roll, topped with your favorite barbecue sauce.
    • You can also boil a pound of pasta and add the pasta to the sausage and peppers. Serve with lots of mozzarella cheese or parmesan cheese.
    • If you are looking for a low carb option, you can just serve sausage and peppers with a delicious side salad or a side dish of broccoli.
    • Serve this with Mexican rice, cauliflower rice, or long grain white rice.

    Tips and Tricks

    • The Instant Pot will take 5-10 minutes to come up to pressure.
    • If you prefer sausage and peppers without tomato, feel free to leave out the canned tomatoes and add an extra ½ cup of chicken broth to the Instant Pot.
    • This recipe would work great with frozen sausage too! No need to change the cook time. The pressure of the Instant Pot will defrost and cook the frozen sausage perfectly.

    Frequently Asked Questions

Why did I get the burn notice on my Instant Pot?

The burn warning comes up when there is not enough liquid in the Instant Pot or something is sticking to the bottom of the pot. To avoid this, make sure you stir the ingredients well before putting the lid on the Instant Pot.

Are sausage and peppers gluten free?

Yes! As long as you don't serve this with any bread, this is an easy gluten-free meal.

What should I do with leftovers?

Place the leftover sausage in an airtight container. They will stay fresh in the refrigerator for up to 4 days. To reheat, place the sausage and peppers in a microwave safe bowl and reheat. You can also reheat them on the stove in a saucepan for 10 minutes on medium heat.

    Can I freeze this recipe?

Yes! Once cooked, place the sausage and peppers into a freezer-safe container. When you are ready to serve this easy dinner, reheat on the stove top for 5-10 minutes until completely heated through.
