- They are very freezer friendly! These waffles are perfect for meal prep. They can easily be reheated in the toaster oven and eaten right before school or work.
Ingredients to Gather
- Butter, melted. Vegetable oil or coconut oil can be used instead of melted butter.
- Milk. Whole milk is best, but you can use your favorite non-dairy milk or 2% milk.
- One large egg. A flax egg would work in this recipe too. Simply mix together 1 tablespoon of ground flax and 3 tablespoons of water. Let that sit and then add it to the rest of the ingredients.
- Real Pumpkin Puree. One 15 ounce can of your favorite brand.
- Vanilla extract. It makes all baked goods just a little better.
- Pumpkin pie spice. There are lots of great pumpkin pie spice seasonings right at the grocery store that you can buy. Pumpkin pie spice is essentially ground cinnamon, allspice, ground ginger, ground nutmeg, and a few other individual spices all mixed together. It's great to have on hand during the Fall.
- Pancake mix. My favorite is Bisquick, but any pancake mix will work. Try to stay away from the "just add water" type of pancake mix.
Pumpkin Puree vs. Pumpkin Pie Filling
This recipe has canned pumpkin puree, which is just pureed real pumpkins. Canned pumpkin pie is essentially the inside of a pumpkin pie. It has all the spices already in it. When making this recipe, make sure it's pure canned pumpkin. Canned pumpkin pie will double the spices, which would overpower these waffles with cinnamon and pumpkin spice.

The Best Type of Pancake Mix To Use
Pancake mix is so versatile! Not only can you make these easy pumpkin waffles, but did you know you can make peanut butter cookies with pancake mix and blueberry Bisquick coffee cake as well?
Pancake mix is essentially all purpose flour, baking powder and baking soda, and a little bit of sugar already mixed in. It cuts down on the amount of extra ingredients you would need for a recipe. This recipe is not made with the "Just add water" type of pancake mix. I haven't tested that recipe yet, so I am unsure if it would work the same.
Let's Make Pumpkin Waffles with Pancake Mix
In a large bowl, combine milk, melted butter, and eggs. Mix well.
Open the can of pumpkin puree and add it to the large mixing bowl. Mix in the vanilla extract and pumpkin pie spice. With a whisk or a wooden spoon, mix well until all the wet ingredients are fully incorporated.
Add the dry ingredients to the wet ingredients and mix well. Do not overmix at this point. It's ok if there are a few lumps left in the batter.
Set up your waffle iron according to the manufacturer's instructions. Spray the inside of the waffle iron with cooking spray. Pour batter into the waffle iron, I found that ½ cup batter is good in my waffle iron, but it depends on the size of your waffle iron. Cook until your waffle iron says it is done and place on a cooling rack once done. Serve with maple syrup and butter.

- Depending on the size of your waffle iron will depend on how many waffles this recipe makes. It makes about 3 cups of batter.
- The best way to incorporate the dry mixture into the waffle batter is to use a rubber spatula and fold the mixture together.
- To make these waffles a little sweeter, add 2 tablespoons of brown sugar to the waffle mix before you add in the dry ingredients.
What to Serve with Pumpkin Waffles
For the perfect fall breakfast, serve these waffles with maple syrup, butter, and chopped nuts. Here are some other delicious ways to serve them as well!
- With pumpkin spiced whipped cream! Add ½ teaspoon of pumpkin pie spice to whipped cream and top the waffles.
- With pure maple syrup. Don't use the artificial stuff, pure maple syrup is the way to go!
- With ice cream! Waffles aren't just for breakfast! Make a batch of these waffles and serve them with cinnamon ice cream or vanilla ice cream for a delicious dessert!

Pumpkin Waffles with Pancake Mix
Ingredients
- 1 ⅓ cup Whole Milk
- 2 tablespoon Melted Butter
- 1 can Pumpkin Puree 15 ounces
- 1 teaspoon Pumpkin Spice
- 1 teaspoon Vanilla
