When I was coming up with a recipe to make with Pure Flavor® Aurora Bites Mini Peppers, I wanted to create an easy recipe to serve for a Mother's Day Brunch, or for a weekend breakfast!

Pure Flavor® Aurora Bites Mini Peppers are so sweet and compliment sausage perfectly! They are so colorful and hold their crisp texture while cooking.

This recipe is brought to you in collaboration with Pure Flavor®. Thank you for supporting the brands that make my blog possible! All opinions are my own.

Why You'll Love This Recipe

  • It's easy to make! Everything is mixed by hand and you'll pour it into a cast iron skillet. No need to break out the stand mixer or hand mixer.
  • It's a twist on the classic! Everyone loves sausage and peppers in the Summer, but surround sweet mini peppers by a fluffy, cheesy egg mixture and you have a winning recipe!
  • It's a perfect brunch menu item! Because this frittata can be served hot or at room temperature, it's perfect for a Mother's Day brunch or a baby shower menu item.

Frittata vs. Quiche

A lot of people confuse a quiche and a frittata.

A quiche is a savory pie. It has a pie dough crust and has an egg and cream filling, kind of like a custard. The egg mixture is then mixed with lots of meats and veggies.

A frittata is basically a large omelet. It does not have a pie dough crust, so you can also compare it to a crustless quiche.

Both a quiche and a frittata are great brunch options!

Variations

  • Lighten it up! Instead of pork sausage, use turkey sausage or chicken sausage.
