Ingredients In This Sausage and Mini Pepper Frittata
- Pure Flavor® Aurora Bites Mini Peppers- Two cups of sliced mini peppers.
- 1 pound sausage- Casing removed.
- Eggs- 8 whole eggs.
- Milk- To get light and fluffy eggs.
- Italian Seasoning
- Cheddar- Colby jack, Monterey Jack, white cheddar, or yellow cheddar can all be used.
Frittata vs. Quiche
A lot of people confuse a quiche and a frittata.
A quiche is a savory pie. It has a pie dough crust and has an egg and cream filling, kind of like a custard. The egg mixture is then mixed with lots of meats and veggies.
A frittata is basically a large omelet. It does not have a pie dough crust, so you can also compare it to a crustless quiche.
Both a quiche and a frittata are great brunch options!

How To Make Sausage and Mini Pepper Frittata
- Preheat the oven to 425 degrees.
- Take the sausage out of the casing. Place the sausage in the cast iron skillet and cook for 5-7 minutes until fully cooked. Break up the sausage so it is in crumbles.
- While the sausage cooks, crack the eggs into a large bowl. Add the milk and whisk for 1 minute or until the eggs and milk are fully incorporated.
- Cut the mini peppers into slices.
- When the sausage is done cooking, turn off the heat. Scatter the pepper slices over the sausage. Pour the egg mixture over the sausage and pepper mixture. Top with the shredded cheddar cheese.
- Carefully place the cast iron skillet in the oven and bake for 12-15 minutes or until there is middle is slightly firm and no longer jiggles.
- Serve immediately.
Variations
- Lighten it up! Instead of pork sausage, use turkey sausage or chicken sausage.
- Make it vegetarian! Leave out the sausage and add tons of veggies! Extra mini peppers, zucchini, chopped broccoli, and chopped onions could all be added to this frittata!
- Make it spicy! Add jalapenos or Monterey Jack cheese to kick up the spice in this recipe.

A half hour before you are ready to serve the frittata, place it in the oven at 350 degrees for 10-15 minutes until the cheese is melted and the frittata is heated through.
Serve this frittata with a side salad if you are serving it for brunch, or you can serve it with sourdough bagels, homemade bagels, or some corn muffins.
