- The Instant Pot cuts the proof time in half. Normally, pizza dough takes a long time to rise. In this pizza dough recipe, the warmth from the "Yogurt Setting" provides the yeast a nice, warm environment to proof quickly. In one hour you'll go from ingredients to pizza dough!

Ingredients For Instant Pot Pizza Dough
- Flour. Bread flour is best, but all-purpose flour can be used as well. Bread flour has more protein in it which makes the dough stretchy.
- Water. Room temperature or just a little warmer is best. Do not use cold water.
- Active Dry Yeast. One package or 2 teaspoons.
- Olive Oil. To add a little fat to the dough which makes it more flavorful.
- Salt. Salt controls the rise of the yeast so it doesn't get huge, but it also adds flavor to the dough.
Pro Tip! Check the expiration date on your yeast. If your yeast is expired, toss it and grab one that isn't expired. Expired yeast won't make your dough rise.
Active Dry Yeast Vs. Instant Yeast
In this recipe, we are using Active Dry Yeast. That means it needs to be "bloomed" or woken up. All you have to do is sprinkle the yeast over some lukewarm liquid and allow it to get foamy. When it does, you are ready to use the yeast!
If it doesn't get foamy, throw out the yeast and start again. That means the yeast is old or expired and won't allow the dough to rise properly.
If you only have instant yeast, you can use that too. No need to "bloom the yeast. Just add it to the liquid along with the flour and salt.
What's The Best Temperature To Activate Yeast?
The water should be between 100 degrees and 110 degrees Fahrenheit.
If the water is too cold, the yeast will not activate. The yeast needs to activate properly or it will not rise and when you open your Instant Pot, you'll have a dense, not risen dough.
If the water is too hot, you run the risk of killing the yeast. A meat thermometer or candy thermometer is perfect to test the temperature of the water.
Step By Step Instructions To Make Instant Pot Pizza Dough
In a liquid measuring cup, add lukewarm water (between 100- and 110-degrees Fahrenheit) and top with the yeast. Allow the yeast to sit for 5 minutes until it starts getting foamy.
Add the flour, olive oil, and salt to the bowl of a stand mixer.
Add the water and yeast mixture to the flour mixture.
With your stand mixer fitted with the dough hook, turn the mixer on medium speed and allow it to knead the dough for 5 minutes. The dough is ready when it fully comes away from the sides of the bowl and forms a ball of dough.
Spray the inner pot of the Instant Pot cooking spray or spread a tablespoon of olive oil around the pot.
Place the dough in the Instant Pot and close the Instant Pot lid.
Set the Instant Pot cook time to 1 hour and press the yogurt button.
After 1 hour, the dough should have doubled in size. Divide the dough into two dough balls on a floured surface.
Preheat the oven to 500 degrees.
Grease the pizza pan or preheat the pizza stone. Add the dough to the pan and bake it in the oven for 5-8 minutes.
Take the pan out of the oven and top the pizza base with your favorite pizza sauce and pizza toppings. Bake for another 10-15 minutes.

Make The Dough Ahead of Time
Refrigerate the Dough! Once the dough has risen and doubled in size, separate the dough into two balls. Place them on a parchment lined baking sheet and cover with plastic wrap. Place the baking sheet in the refrigerator and use them whenever you are ready. You can keep them refrigerated for up to three days.
Freeze the Dough! Once the dough has risen and doubled in size, separate the dough into two dough balls. Place them on a parchment lined baking sheet and freeze them for a few hours until they are completely frozen. Once frozen, take them off the baking sheet and place them in Ziploc bags. Each dough ball will probably need it's own Ziploc bag, as they likely won't fit in just one.
Tips and Tricks
- Mix up the flours! You can use a mixture of whole wheat flour and bread flour for more fiber and some added nutrition.
- If you have a glass lid for your pressure cooker, this is a great time to use it. You will be able to keep an eye on how big the dough is getting so it does not over rise.
- Pizza comes out best on a pizza stone. You have to preheat the stone in the oven before you can bake on it, otherwise it won't make crispy pizza. We also love this pizza pan. The holes allow the crust to get really crispy and delicious.
Frequently Asked Questions About Instant Pot Pizza Dough
Yes! Don't proof it in the Instant Pot though. Place the dough in a large bowl and cover with a damp cloth. Place the bowl is a warm place, like an oven that is turned off. Newer ovens often have the "Proof" button which can be used as well. The dough should double in size in 2-3 hours.
This pizza dough will make two dough balls. You can make full sized pizzas, mini pizzas, or even calzones with this dough! If you prefer a thin crust pizza, roll the dough out very thin. For a Chicago style deep dish pizza, grease a cast iron skillet and press the dough into the skillet. Top with your favorite toppings and bake.
It's always best to precook the dough for a few minutes. If you are using a very hot pizza oven, you may not need to. If you are using a standard oven, it is best to precook the dough for a few minutes to get a crispy bottom before adding heavy toppings to the dough.

Good morning, making it right now. We love the pizza dough. I will let you know how the breadsticks go. I might put some cheese inside some of them for the kids. Also making another loaf of sourdough this afternoon with the instant pot. We love love that recipe you have posted. Good morning, made the bread sticks. They came out good. Rolled the dough out in a rectangle cut it into sticks placed on a parchment paper lined cookie sheet and baked at 375 for about 18-20 minutes. Then brushed them with 3tbsps melted butter 1/2 garlic salt mixed together. Then sprinkled Parmesan cheese on top. Saved the other dough ball for another night. Will definitely made them again using the dough. Now we are off to the swim meet! Thank you again for your instant pot recipes. Sourdough bread, pizza dough and blueberry jam! We love all those so far.

Hi! You can make one large pizza on a baking sheet, or two smaller pizzas on 12 or 16 inch pizza pan. It would depend on how thick or thin you like your pizza.
