I love making sourdough bread. It is one of my favorite things to make, and my kids love it! They call it "mommy bread".

One thing my kids don't love is the crust of the sourdough bread. So instead of throwing it away, I keep it in a Ziploc bag and toast it up to make breadcrumbs. Then, I'll use the breadcrumbs on chicken parmesan, chicken cutlets, or in meatballs!

Sourdough can be a funny thing too. Sometimes you think you have the perfect loaf, and then you pull it out of the oven and it's flat as a pancake! When that happens, make that failed loaf into these breadcrumbs!

    Why You'll Love This Recipe

    • It is a way to reduce waste! We are all concerned with the amount of waste we are producing, so there is no need to throw out those old sourdough scrapes. Make them into breadcrumbs and give them new life!
    • Homemade is better than store bought! This is definitely one of the times when homemade is better than store bought! Have you ever looked at the ingredients in a can of Italian style breadcrumbs? It's kind of crazy! These breadcrumbs only have homemade sourdough bread in them!
    • You can use this method for other bread! This method is how to make breadcrumbs. I just happen to have sourdough bread around all the time. Use this method with Italian bread, French bread, and even ciabatta bread!

    Ingredients You'll Need

The sourdough bread is in a measuring cup.

Simple! All you need is some day old sourdough bread. If you would like to season them as soon as you make them, you'll need Italian Seasoning and granulated garlic as well.

Equipment Needed To Make Sourdough Breadcrumbs

    • Knives
    • Cutting Board
    • Baking Sheet
    • Food Processor

    How To Make Sourdough Breadcrumbs

    • Preheat the oven to 325 degrees.
    • Cut or tear the sourdough bread and place it on a dry baking sheet in a single layer.
    • Place the baking sheet in the oven for 15-20 minutes or until the bread cubes are dry, but not browned.
    • Remove the bread from the baking sheet and place them in a food processor in batches. I was able to process mine in 3 batches.
    • Turn the food processor on high and process until small crumbs form.
    • Remove the crumbs from the food processor and place them in an airtight container. If you are seasoning the breadcrumbs, add the Italian seasoning and the granulated garlic at this stage.
The bread is on a baking sheet.
The sourdough bread is in a food processor ready to be made into sourdough breadcrumbs.

How Would You Use Sourdough Breadcrumbs?

Breadcrumbs can be used in so many recipes! I use them in 5 Ingredient Meatballs, Pizza Meatballs, Meatball Sub Dip, and to top a Baked Clam Dip.

You can use them to bread chicken parmesan, or to stuff Italian Style Mushrooms with.

The possibilities are endless! Use these sourdough breadcrumbs anywhere you would use Italian Style breadcrumbs or plain breadcrumbs from the store.

The sourdough breadcrumbs are in a bowl.

    Frequently Asked Questions

How long do sourdough breadcrumbs last?

Indefinitely! Keep them in an airtight container in your freezer and they will last forever! If you keep them in the refrigerator or in the pantry they are more likely to develop mold. Keep them in the freezer and you can have them forever!

What should I season my breadcrumbs with?

I like to add Italian seasoning to my breadcrumbs and a little granulated garlic. You can add whatever dried spices you would like, such as dried rosemary, dried basil, dried thyme, or dried parsley. Cheese should be added right before you are going to use them. Add parmesan, Pecorino Romano, or your favorite hard cheese to the recipe you are using the breadcrumbs for.

My breadcrumbs are not getting small enough in the food processor, what am I doing wrong?

If your bread pieces are still chunky after you process them, place them back on the baking sheet and bake them for a few more minutes. This will get any remaining moisture out of the bread pieces and you will be able to process them even further into crumbs.

I actually had some leftover sourdough bread and decided to make this. It was really good and flavorful with the added seasonings. I put the rest in the freezer for a later date.
