I bet you would never guess that if you mix sweet potatoes and self rising flour together, you can make dinner rolls! These rolls are full of sweet potato flavor and a cross between a biscuit and a light dinner roll. No need to let the dough rise, these are mixed then baked, just like my drop biscuits with self rising flour.
Dinner rolls are a must make for Thanksgiving dinner, but really whenever you are making dinner! They are the perfect addition to serve with soup, stews, chicken dinners, and so much more. Ingredients You'll Need
You only need a few simple ingredients for these delicious rolls!
- Sweet Potatoes. You will need 2 cups of mashed sweet potato. You can roast the sweet potatoes, make them in the microwave, or make Instant Pot sweet potatoes. I like making my own sweet potato puree, but there are cans of sweet potato. Make sure to drain any excess liquid from the potatoes.
- Self Rising Flour. You need 2 cups of flour for this recipe. All purpose flour or gluten free flours won't work because they do not have the little bit of baking powder in them. You can easily find self rising flour in the grocery store, but you can also make your own homemade self rising flour too!
Different Types of Flours
Have you ever wondered what the difference between self rising flour vs all purpose flour is? Here's a quick run down.
Self-rising flour is all purpose flour that has baking powder and a small pinch of salt already in it. Classic southern recipes usually use self-rising flour instead of plain flour. Even though some people may think it is self-raising flour, it is actually self-rising flour. I love making banana bread and pancakes with self-rising flour too!
King Arthur is my favorite variety of self-rising flour. If you don't have a bag of it in your pantry, you can make your own self-rising flour really easily!
Cake Flour is used to make cakes. It is a finer flour so the cakes stay nice and light and airy. It usually has a lower protein content as well so cakes don't get tough.
Bread flour is used to make breads like sourdough bread. It has a higher protein content which helps develop the gluten in bread. Bread flour is also made from a harder whole wheat flour, so it holds up better to making bread and the kneading process.
How To Make 2 Ingredient Sweet Potato Rolls
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Set that aside.
With a potato masher, mash the sweet potatoes into a puree. Add the self rising flour to the bowl and mix the wet ingredients with the dry ingredients. You can use a wooden spoon, but I found that I got the best results by using my hands get the mixture mixed the best.
Lynn's Tip! The dough will look very shaggy at first, but keep mixing. The shaggy dough will come together into a smooth dough when you mix it. If you want, you can add the mixture to the bowl of a stand mixer and mix that way.
Roll pieces of the dough into balls. I like using an ice cream scoop to scoop the dough balls and then roll them in my hands. Place the dough balls on the baking sheet. Bake for 15-20 minutes or until the rolls are golden brown. Serve immediately.
Tips and Tricks
- The rolls are ready when they are just golden brown and when you tap on the they sound hollow.
- The dough will be a little sticky when it is all mixed together. Flour your hands before rolling them into balls to make them easier to remove from your hands.
- To make these a little more decadent, brush the top of the rolls with melted butter before baking.
- Add some seeds! Brush the top of the rolls with an egg wash and top with sesame seeds, poppy seeds, or a little more kosher salt.
- Make these in the air fryer! Place them in the air fryer for 15 minutes if you do not want to use the oven or the oven is unavailable.
- These would be delicious with St. Louis Style Pork Spare Ribs!
Storage Tips for 2 Ingredient Sweet Potato Rolls
- To make the dough ahead of time, mix the ingredients together and cover the bowl with plastic wrap. Place it in the refrigerator up to 24 hours. When you are ready to bake them, place them on a baking sheet and bake.
- Once the rolls are baked, allow them to cool to room temperature and then place them in an airtight container on the counter. Do not place the baked rolls in the refrigerator as they will quickly go stale or produce mold.
- The dinner rolls freeze beautifully! Place the rolls in an gallon sized Ziploc bag and freeze up to 3 months. Gently heat them in the oven by placing them on a baking sheet and reheat them for 10 minutes at 300 degrees.
Frequently Asked Questions
If you only have all purpose flour on hand, you will have to add baking powder to the all purpose flour and a little bit of salt. For every 1 cup of flour, you will need to add 1 ½ teaspoons of baking powder and ¼ teaspoon of salt.
I haven't tried making this into bread. You can probably add it to a loaf pan or make it into a rustic style bread, and then bake for 1 hour.
Regular potatoes do not get as creamy as mashed sweet potatoes. You can use pumpkin puree instead, just add ½ cup more flour because pumpkin puree tenders to be more watery than sweet potatoes.
