2 Ingredient Sweet Potato Rolls

These 2 Ingredient Sweet Potato Dinner Rolls are so easy to make, ready in less than an hour, and require no yeast at all! Mix everything together and you have delicious dinner rolls ready in no time!

  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Set that aside.
  • Mash the cooked sweet potatoes in a large bowl.
  • Add the self rising flour to the bowl.
  • Mix together the ingredients. Use a wooden spoon or your hands. The dough will look very shaggy, but as you mix it will come together into a smooth dough.
  • Take pieces of the dough and roll it into dough balls. Place them on the baking sheet and bake for 15-20 minutes or until the rolls are lightly golden brown.

Notes

  • You can also mix the dough in a stand mixer if it is easier.  Mix until it is just mixed together and forms a smooth dough.  Do not overmix.
  • The rolls are ready when they are just golden brown and when you tap on the they sound hollow.
  • To make these a little more decadent, brush the top of the rolls with melted butter before baking.
  • Add some seeds! Brush the top of the rolls with an egg wash and top with sesame seeds, poppy seeds, or a little more kosher salt.
