Ingredients

  • 2 cups All purpose flour
  • 2 teaspoon Baking Powder
  • ½ teaspoon Nutmeg Freshly grated if possible
  • 5 tablespoon Butter Melted
  • 2 Eggs
  • 2 tablespoon Sugar
  • 1 ½ cups Eggnog

Instructions

  • Preheat your waffle maker according to the manufacturer's instructions.
  • In a large bowl or a liquid measuring cup, mix together the melted butter, eggnog, and egg until fully combined. Add the sugar and mix again.
  • In a medium bowl, add the flour, baking powder, and nutmeg. Mix the dry ingredients until fully combined.
  • Pour the flour mixture into the wet ingredients and mix until just combined. It's ok if there are a few lumps left in the batter, you do not want to overmix.
  • Spray the waffle maker with nonstick cooking spray or spread on melted butter. Scoop batter into the waffle maker. Cook based on your waffle maker instructions. Serve with maple syrup and butter.

Notes

  • Make sure your waffle maker is preheated fully before adding the waffle batter.  This will make sure your waffles are nice and crisp.
  • If your waffle maker does not have a light that lets your know when the waffles are done, it's time to take your waffles out of the waffle iron when steam starts coming out of the iron.
  • Do not open the waffle maker once you close it. To get the crispiest waffles, it's important that the waffles remain untouched until fully cooked.
  • Be very careful when taking the hot waffles out of the waffle iron.
