Pumpkin Waffles Using Pancake Mix

- 1 ⅓ cup Whole Milk
- 2 tablespoon Melted Butter
- ½ cup Pumpkin Puree
- 1 teaspoon Pumpkin Spice
- 1 teaspoon Vanilla
- 1 large Egg
- 2 ¼ cups Pancake Mix
In a large bowl, mix together the milk, butter, and eggs.
Add the pumpkin puree into the large bowl. Add the pumpkin spice and vanilla. Mix well until all the ingredients are combined.
Add the pancake mix to the large bowl. Mix until all the ingredients are combined but do not overmix. It's ok if there are a few lumps left in the batter.
Set up your waffle iron. Spray your waffle iron with cooking spray. Add the batter to the waffle iron and close the waffle iron. Cook based on your waffle iron's instructions. Serve with maple syrup and butter.
- When making a large batch of waffles, preheat the oven to 200 degrees and place the waffles on a baking sheet and keep them warm in the oven.
- Depending on the size of your waffle iron will depend on how many waffles this recipe makes. It makes about 3 cups of batter.
- The best way to incorporate the dry mixture into the waffle batter is to use a rubber spatula and fold the mixture together.
- To make these waffles a little sweeter, add 2 tablespoons of brown sugar to the waffle mix before you add in the dry ingredients.
