Ingredients

  • ¾ cup All Purpose Flour
  • ½ teaspoon Baking Powder
  • ½ tablespoon Sugar
  • 1 Egg
  • ½ cup Milk Whole, almond, soy, or your favorite milk
  • 1 tablespoon Butter Melted

Instructions

  • In a medium bowl, mix together the melted butter, sugar, and milk. Crack the egg into the bowl and mix well.
  • Add the all purpose flour and baking powder to the bowl. Mix the dry ingredients into the wet ingredients until just mixed. Do not overmix. It's ok if there are a few lumps left in the batter.
  • Spray a large skillet with non-stick cooking spray or add a small pat of butter to a pan. Preheat the pan slightly. Add ⅓ cup batter to the pan and let it cook for 2-3 minutes over medium heat. When bubbles start coming to the surface of the pancakes it is time to flip the pancake.
  • Cook on the second side for another 1-2 minutes. Remove the pancake from the pan and continue this process with the rest of the batter. Serve immediately.

Notes

  • Self rising flour can be used instead of all purpose flour, you would just need to leave out the baking powder in this recipe. A combination of whole wheat flour and all purpose flour can be used too, you might need to add a little more milk if the pancake batter is too thick.
  • Do not push down on the pancakes when you flip them. Though it might be tempting to push down on the pancakes, if you want perfect pancakes, just let it hang out and cook in the pan or hot griddle.
  • The pancakes are ready to flip when the middle bubbles. Small bubbles will start to come through the pancake batter and show on the surface of the pancakes. The edges of the pancakes will also start to dry out. When you see these two signs, it's time to flip the pancakes to the second side.
  • Use an ice cream scoop or a measuring cup to measure the batter. This ensures the pancakes are all the same size will cook evenly and you make the best pancakes you can make.
