Tater Tot Breakfast Casserole Recipe

This hearty Tater Tot Casserole is the perfect comfort food! Made with savory breakfast sausage, fluffy eggs, melty cheddar cheese, and crispy tater tots, it’s the perfect make-ahead breakfast or easy weeknight dinner. Everyone will love the golden, cheesy topping and cozy flavors in every bite!

Ingredients

  • 1 lb Breakfast Sausage
  • 1 small Onion Diced
  • 8 large Eggs
  • 1 cup Milk Whole milk or 2% milk
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 cups Cheddar Cheese Shredded
  • 1 bag Frozen tater tots 28-32 oz bag

Instructions

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  • In a skillet over medium heat, cook sausage and onion until browned and fully cooked. Drain excess grease.
  • In a large bowl or a liquid measuring cup, whisk together eggs, milk, salt, and pepper.
  • Spread cooked sausage evenly in the baking dish. Sprinkle cheese over the sausage. Pour the egg mixture on top. Arrange tater tots in a single layer over everything.
  • Bake uncovered for 45–55 minutes, or until eggs are set and tots are golden brown.

Notes

  • Feel free to add some veggies to this casserole! Green peppers, mushrooms, red peppers, or zucchini would all be delicious!
  • Cheddar cheese, Colby jack cheese, Monterey jack cheese, or a combination of all of them will work.  Use your favorite!
  • You can make this recipe ahead of time and then arrange it in the baking dish.  Cover it and place it in the refrigerator until you are ready to bake it.
