Silver Dollars Pancakes

Perfectly golden brown and fluffy, these mini silver dollar pancakes are a delicious breakfast to enjoy any time of the week! If you need a change from regular pancakes, these tiny pancakes will be your new favorite recipe!

Ingredients

  • 1 ½ cups All Purpose Flour
  • 2 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups Milk Whole Milk, 2% or your favorite nondairy milk
  • 2 Eggs
  • 3 tablespoon Melted Butter

Instructions

  • In a medium bowl, add all the all purpose flour, baking powder, and salt. Mix it well and set that aside.
  • In a large bowl, add the milk, melted butter, eggs, and vanilla. Mix well. Add the dry ingredients to the wet ingredients and mix until fully combined. It's ok if there are a few lumps left in the batter.
  • Set the large nonstick skillet over medium heat. Add a pat of butter to a pan or a griddle and let it melt. With a tablespoon measuring spoon, add a tablespoon of batter into the melted butter. Let it cook for 2-3 minutes over medium heat on the first side. When there are bubbles coming up through the center of the pancake, flip the pancake over.
  • Cook for another 2-3 minutes on the second side. Take the pancake out of the pan and serve these adorable mini pancakes with maple syrup, fresh fruit, butter, or your favorite pancake toppings.

Notes

  • Use your favorite nondairy milk or 2% milk if you do not have whole milk.
  • Do not push down on the pancakes when you flip them. Though it might be tempting to push down on the pancakes, if you want perfect pancakes, just let it hang out and cook in the pan.
  • The pancakes are ready to flip when the middle bubbles. Small bubbles will start to come through the batter. The edges of the pancakes will also start to dry out. When you see these two signs, it's time to flip the pancakes.
