Kefir Snickerdoodles

- 3 cups All Purpose Flour
- 1 ½ teaspoon Cinnamon Plus 1 Tablespoon
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- ½ teaspoon Salt
- 1 cup Butter Room Temperature
- 1 cup Sugar Plus ¼ cup for topping
- 2 large Eggs
- 1 teaspoon Vanilla
- ¾ cup Vanilla Kefir Lifeway
In a large bowl, mix together the flour, cinnamon, baking soda, baking powder, and salt. Set that aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar for 2 minutes on medium speed.
Add the eggs, vanilla, and kefir to the stand mixer and mix well.
Add the dry ingredients to the stand mixer and mix for 1 minute until well combined. Cover the bowl with plastic wrap and refrigerate for 1 hour.
When ready to bake, preheat the oven to 350 degrees.
In a small bowl, mix together ¼ cup of sugar with 1 tablespoon of cinnamon.
With an ice cream scoop, scoop out a portion of the dough and roll it into the cinnamon and sugar mixture. Place the dough ball on a parchment lined baking sheet and bake the cookies for 12 minutes until just slightly browned.
Allow the cookies to cool on a wire rack before serving. Enjoy!
- Instead of vanilla kefir, original flavor or pumpkin spice can be substituted.
- The cookies are done when they are just slightly browned and they have spread.
- Make sure to leave room between each cookie as they do tend to spread a lot.
