Ingredients

  • 2 cups Bisquick
  • 1 ¼ cups Milk Whole milk or your favorite non-dairy milk
  • 2 Eggs
  • 2 Bananas Brown and Spotty
  • 1 teaspoon Vanilla Extract

Instructions

  • In a medium bowl, add the bananas. Mash them well until the bananas is very mashed.
  • Add the large eggs, milk, vanilla extract, and Bisquick mix to mashed banana. Mix the pancake mixture together. It's ok if there are a few lumps left in the batter, it doesn't have to be smooth.
  • Place a little butter in a griddle or a pan. Scoop ¼ cup of batter into the melted butter in the pan and cook until bubbles start coming through the pancake, which will take about 2-3 minutes. Both sides of the pancake should be golden brown.
  • Flip the pancake over and cook for another 2-3 minutes. Serve with warm maple syrup, fresh fruit, and butter.

Notes

  • Depending on how big you make the pancakes will depend on how many pancakes you will get.  This recipe makes about 10 large pancakes using a ¼ cup measuring cup.
  • The bananas should be brown and spotty, but not black.
  • You can use your favorite milk for this recipe.
  • If you have another pancake mix it will work too!
