Bacon Stuffed Mini Peppers

- 20 Mini Peppers
- 1 lb Coleman Natural Applewood Smoked Uncured Bacon
- 1 ¼ cup Whipped Cream Cheese
- ½ cup Cheddar Cheese Shredded
Preheat the oven to 400 degrees.
Place the bacon on a rimmed baking sheet in a single line. Bake the bacon for 12-18 minutes or until browned.
While the bacon cooks, wash the peppers. Cut the peppers in half and remove the seeds. Place the peppers on another baking sheet.
In a medium bowl, add the whipped cream cheese and cheddar. Mix well.
When the bacon is done cooking, remove the bacon from the baking sheet and place it on a paper towel lined plate. Remove any excess fat that is on the bacon.
Place the bacon on a cutting board and cut in small pieces. Add the bacon pieces to the bowl of cream cheese and cheddar. Mix well.
Spoon the cream cheese mixture into the mini pepper halves. Place the stuffed peppers back on the baking sheet. Continue until all the peppers are stuffed.
Baked the peppers for 10-15 minutes or until they are golden brown and the cream cheese is melted. Serve immediately.
- If you don't have whipped cream cheese, you can use a brick of cream cheese. Soften the cream cheese by allowing it to come to room temperature. That will make it easier to mix.
- Use jalapenos if you want to make these bacon stuffed mini peppers spicy!
