Ingredients

  • 1 box Lemon Cake Mix
  • cup Melted Butter
  • 2 Egg
  • 1 Lemon OPTIONAL
  • ½ cup Powdered Sugar OPTIONAL

Instructions

  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper or a silicone baking sheet. Set that aside.
  • In a large mixing bowl, pour in the dry cake mix, egg, melted butter, lemon zest, and lemon juice (if using). Mix well to combine.
  • To make these crinkle cookies, with a cookie scoop, scoop out the cookie dough and roll it in the powdered sugar. Place the cookie dough ball on the cookie sheet and continue with the rest of the dough.
  • Bake the cookies for 10-12 minutes or until just slightly golden brown. Let them cool on a wire rack before serving.

Notes

  • The dough will be pretty wet, but that's ok! It makes a really chewy lemon cookie! When you are rolling the dough in the powdered sugar, roll it well and the dough ball will come together better. If you feel that the dough is still to loose, add 2 tablespoons of all purpose flour to the mixture.
  • Vegetable oil, coconut oil, or avocado oil can be using instead of melted butter if you prefer.
