Ingredients

  • 1 lb Brussel Sprouts
  • 2 tablespoon Olive Oil
  • 2 Garlic Cloves Minced
  • 1 cup Vegetable Broth
  • ½ cup Parmesan Cheese

Instructions

  • Wash the Brussel sprouts and cut the stem off the Brussel sprouts, removing the outer leaves. If there are larger sprouts, cut them in half.
  • Press the Instant Pot saute function. Add the olive oil and minced garlic to the Instant Pot. Sauté for 1 minute.
  • Add the Brussel sprouts to the Instant Pot. Sauté for 3 minutes. Add the Brussel sprouts and the vegetable broth to the Instant Pot.
  • Cancel the saute function and close the Instant Pot lid. Make sure the knob on the lid is set to the sealing position. Set the Instant Pot cook time to 4 minutes on High pressure.
  • Once the cooking time is complete, quick release the pressure that is built up in the Instant Pot.
  • Remove the Brussel sprouts from the Instant Pot with a slotted spoon and place them in a serving bowl. Add the parmesan cheese and season with salt and black pepper. Toss to combine and serve immediately.

Notes

  • The Instant Pot will take 5-10 minutes to come up to pressure before it will begin cooking.
  • To clean the Brussel sprouts, cut the bottom stem portion off and place the Brussel sprouts in a large bowl. Fill the bowl with water. Any dirt that is in the sprouts will fall to the bottom. Remove the Brussel sprouts from the water and dry them off.
  • Be careful not to overcook the Brussel sprouts. They will easily get mushy and not be very palatable. As soon as the cooking process is over, quick release the pressure immediately.
