Crusty Olive Bread in the Instant Pot

Proofing bread in the Instant Pot saves time and is so easy! This olive bread is the perfect addition to any charcuterie board and is delicious dipped in olive oil or slathered with cheese! Give it a try to impress all your guests at your next family gathering!

Ingredients
  

  • 4 cups Bread Flour
  • 2 teaspoon Instant Dry Yeast one packet
  • 1 tablespoon Honey
  • 2 cups Water Lukewarm
  • 1 ½ teaspoon Salt
  • ½ cups Olives Chopped, kalamata, or Spanish Green olives
  • 1 cup Parmesan Grated
  • 1 tablespoon Italian Seasoning

Instructions
 

  • In the bowl of a stand mixer fitted with the hook attachment, mix together the flour, water, salt, yeast, and honey until combined. Add the olives, parmesan, and Italian seasoning.
  • Turn the mixer on low for 5 minutes, until the dough comes together and does not stick to the sides of the bowl. If the dough is too sticky, add ¼ cup more flour as needed. It should be a little sticky, but not soupy.
  • Spray the bowl of your Instant Pot with cooking spray or olive oil and place the dough into the Instant Pot. Close the Instant Pot and set it to "Yogurt" for 2 hours.
  • After 2 hours, preheat the oven to 450 degrees and take the dough out of the Instant Pot and place it on a flour dusted counter.
  • Shape the dough into a circle and place it on a piece of parchment paper. Place the dough and the parchment paper into a Dutch oven. Score the top of the dough with a sharp knife.
  • Put the Dutch oven in the oven for 30 minutes. After 30 minutes, take the lid off the Dutch oven and cook for 15 minutes or until the bread if golden brown.
  • Allow the bread to cool slightly before serving.

Notes

  • All purpose flour can be used instead of Bread Flour
  • Use your favorite types of olives.  Kalamata, Spanish olives, or a mixture of both.
  • Sugar can be used instead of honey
  • Keep this bread in a Ziploc bag on the counter for 2-3 days.  Do not refrigerate.
  • The bread is done when it is golden brown and sounds hollow when you tap on it.  It can take up to 30 minutes with the lid off, but check after 15 minutes.
