  • Instant Pot or Pressure Cooker

  • 2 tablespoon Butter
  • ½ cup Carrots Diced
  • ½ cup Onions Diced
  • 2 tablespoon Flour
  • 2 cups Ham Cooked
  • 2 cups Golden Potatoes about 4 medium potatoes
  • 32 oz Chicken Broth Low Sodium
  • ½ cup Heavy Cream
  • 1 cup Cheddar
  • Salt and Pepper to Taste

  • Turn the Instant Pot on "sauté". Chop the carrots and onions and place them in the Instant Pot with the butter. Sauté for 5 minutes until the vegetables are softened.
  • Add the chopped ham, diced potatoes, and flour. Stir for 30 seconds to combine the ingredients
  • Add the chicken broth and heavy cream. Stir again and close the Instant Pot lid.
  • Cancel the "sauté" mode on the Instant pot. Turn the Instant Pot to "High" and cook for 10 minutes.
  • Allow the Instant Pot to naturally release for 15 minutes.
  • Release any remaining pressure. Add the cheddar into the Instant Pot and season with salt and pepper. Serve immediately.

  • Top this soup with crispy ham bits, sour cream, green onions, or more shredded cheddar cheese.
  • Peeling the potatoes is optional.  I rarely peel my potatoes, so I left the skin on.
  • Yellow cheddar, white cheddar, Colby jack, and Monterey Jack are all delicious cheese options.
