Oreo Cheesecake Bars
A chocolatey, Oreo crust and creamy cheesecake filling makes a perfect combination for these Oreo cheesecake bars! And to top it all off, the cheesecake filling is full of more crushed Oreos! An easy, kid friendly dessert!
For the Crust
- 20 Oreos about 2 cups
- 6 tablespoon Butter Melted
For the Cream Cheese Mixture
- 2 Packages Cream Cheese Full Fat
- 1 Egg Large
- ⅓ Cup Sugar
- 2 teaspoon Vanilla
- 8 Oreos Crushed
To Make The Crust
Preheat the oven to 375°. Prepare a 8x8 inch baking pan by lining it with parchment paper.
In a food processor, add 20 Oreos. Pulse until the Oreos are pulverized and the mixture looks like sand (about 1 minute). Add the melted butter and pulse 5 more times until the mixture is completely combined.
Add the crumbs to the prepared 8x8 inch pan. Pat the crumbs down evenly and bake the crust for 8 minutes. After 8 minutes, take out the pan and allow it to cool slightly.
To Make the Cheesecake Filling
In a large bowl, add the cream cheese, eggs, sugar, and vanilla. With a hand mixer, mix well until fully combined.
Add 8 Oreos to a Ziploc bag and with a rolling pin, crush the Oreos into crumbs. Add the crumbs to the cream cheese mixture and mix to combine.
Add the cream cheese mixture to the Oreo crust and spread it out evenly. Place the pan in the oven and bake for 25 minutes or until the bars are just slightly browned and there is no wobble left in the bars. Allow the bars to cool completely before cutting.
- To make the crust, you could you already crushed Oreo crumbs that are found in the grocery store. Use 2 cups.
- Wait until the bars are cooled to cut them. The cream cheese mixture needs to set before it can be cut into otherwise it will not hold it's shape.
- You could eat these bars at room temperature, but they are best chilled.
