Sourdough Discard Blueberry Muffins

Bursting with sweet blueberries, these Sourdough Blueberry Muffins are the perfect use for that leftover sourdough discard! Make a big batch on the weekend and enjoy them throughout the week!

Preheat the oven to 400 degrees. In a large bowl, add the sugar and eggs.

Add the eggs to the bowl and mix well to combine.

Add the sourdough starter and mix again.

Add the flour and leavening agents to the bowl.  Mix until just combined.  It's ok it there are a few lumps.

Gently fold the blueberries into the batter.

Scoop the batter into lined muffin tins.  Bake for 15-20 minutes or until a toothpick is inserted and comes out clean.
