Light, fluffy, and a delicious breakfast, these pancakes with cake flour are the perfect breakfast to make! When you don't have all purpose flour handy, use cake flour!
Mix together the eggs, buttermilk, sugar, and vanilla extract in a large bowl.
Mix in the cake flour and leavening agents.
Mix the ingredients together until a batter forms. It's ok if there are a few lumps left in the batter.
Add a scoop of the pancake batter into a greased pan or griddle. Cook until bubbles start coming through the pancake.
Flip the pancake over and cook for 2-3 minutes on the other side. Serve with maple syrup, fresh fruit, and whipped cream.
